Grilled Lamb Steaks

Tender Grilled Lamb Steaks

Grilled lamb steaks aren't difficult to make at all. In fact, they are just as simple as grilling any beef steak!

A few minutes of cook time and a simple seasoning of salt & pepper are all it takes. These quick and easy grilled lamb steaks are all the reason you need to fire up the grill!

🥘 Grilled Lamb Steaks Ingredients

You only need 3 ingredients to make these lamb steaks! They have plenty of flavor, so a little salt and pepper is more than enough seasoning.

  • Lamb Steaks - 12 ounces of lamb steaks (2 6-ounce lamb leg steaks).
  • Salt & Pepper - ¼ teaspoon each.
  • Butter - 1 tablespoon divided, for resting.

🔪 How To Grill Lamb Steaks

This recipe is all about timing and temperature! You will need a grill, your grilling utensils, and a meat thermometer.

I made 2 6-ounce lamb steaks when cooking this recipe and we enjoyed 1 steak per person. You can easily buy more steaks and scale up the salt, pepper, and butter if desired!

  1. Season. If time allows, pull your 12 ounces of lamb steaks from the fridge and let them come to room temperature for 40 minutes. Season them generously all over with ¼ teaspoon of both salt & pepper.
  2. Prep the grill. Meanwhile, grease and preheat your grill so that it is prepared for direct cooking over medium-high to high heat (375°F+ / 190°C+).
  3. Grill. Once hot, place your lamb steaks on the grill and cook for 4-5 minutes on each side (or until the lamb reaches an internal temperature of 135°F (57°C) for medium-rare).
  4. Rest. Transfer the steaks to a plate or cutting board. Top them with ½ a tablespoon of butter each, then cover them with a loosely tented square of foil and let them rest for 5 minutes before serving.

Your grilled lamb steaks will be delicious with any sides you would serve with beef steaks! Try grilling some corn on the cob or yellow squash. Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • Allowing the meat to come to room temperature before grilling not only lessens the cooking time but also helps it to cook evenly.
  • The different internal temperatures of doneness for lamb are:
    • Rare: 115-120°F (46-49°C)
    • Medium-Rare: 125°F (52°C)
    • Medium: 130°F (54°C)
    • Medium-Well: 145°F (63°C)
    • Well Done: 150°F (65°C)
  • Resting lamb allows the juices to redistribute throughout the meat, adding flavor and keeping it tender!

🥡 Storing & Reheating

In an airtight container, leftover grilled lamb steaks will last for 3 days. Alternatively, they may be placed in a freezer-safe storage container or heavy-duty freezer bag and frozen for up to 3 months.

Reheating Grilled Lamb Steaks

Defrost frozen lamb in the fridge overnight. Preheat your oven to 350°F (175°C) and place the lamb in a baking dish with a splash of broth. Cover with foil and bake for 15-20 minutes until warmed through.

You may quickly reverse-sear them for a minute or 2 in a skillet on the stovetop if desired. 

❓ Should Lamb Steaks Be Pink?

Chefs and meat enthusiasts agree that lamb steaks are the most tender, juicy, and flavorful when cooked medium-rare. However, it should be noted that the CDC recommends an internal temperature of 145ºF (65ºC), which is medium-well.

❓ How Long To Grill Lamb Steaks?

This depends on how done you want your steaks. 3 minutes per side over medium-high to high heat will give you a rare lamb steak. 4-5 minutes should be a perfect medium rare. 6 minutes should be closer to medium. 7 minutes will be close to medium well. Anything more, your lamb steaks will be well-done.

❓ What Do Lamb Steaks Taste Like?

Lamb has a more earthy and robust flavor than beef. Some cuts of lamb, or lamb from different regions, taste more 'gamey' than others.
