Grilled lamb steaks are tender, flavorful, and perfectly suited for date nights, special occasions, or family dinners! All it takes is some light seasoning, a few minutes on the grill, and a pat of butter to top it all off! You won't miss beef one bit once you bite into these juicy grilled lamb steaks that are full of great flavor!
If time allows, pull your lamb steaks from the fridge and let them come to room temperature for 40 minutes. Season them generously all over with salt & pepper.

Meanwhile, grease and preheat your grill so that it is prepared for direct cooking over medium-high to high heat (375°F+ / 190°C+).
Once hot, place your lamb steaks on the grill and cook for 4-5 minutes on each side (or until the lamb reaches an internal temperature of 135°F (57°C) for medium-rare).
Transfer the steaks to a plate or cutting board. Top them with ½ a tablespoon of butter each, then cover them with a loosely tented square of foil and let them rest for 5 minutes before serving.

Allowing the meat to come to room temperature before grilling not only lessens the cooking time but also helps it to cook evenly.
Resting lamb allows the juices to redistribute throughout the meat, adding flavor and keeping it tender!
To store: In an airtight container, leftover grilled lamb steaks will last for 3 days. Alternatively, they may be placed in a freezer-safe storage container or heavy-duty freezer bag and frozen for up to 3 months.
To reheat: Defrost frozen lamb in the fridge overnight. Preheat your oven to 350°F (175°C) and place the lamb in a baking dish with a splash of broth. Cover with foil and bake for 15-20 minutes until warmed through. You may quickly reverse-sear them for a minute or 2 in a skillet on the stovetop to freshen up the sear if desired.
