Fried Bologna and Egg Sandwich

I know, I know - it's just bologna fried and added to a sandwich. How good can it really be, right?! It might surprise you to know that a quick pan-frying of the bologna takes this humble sandwich meat to gourmet levels.

It had been FOREVER since I made this fried bologna and egg sandwich (like since my high school days!). But, for some reason, I felt the need to have one the other morning.

Let's just say that I was wondering where it has been all these years! Plus, it's a new fave for my daughter too.

❤️ Why I Love This Recipe

  • Quick recipe. Literally, this sandwich will take just 10 minutes from start to finish.
  • Unique flavors. Taking a childhood favorite and making it new again! And introducing it to our next generation. 🙂
  • Fun to make. Making a yummy egg sandwich with melty cheese and fried bologna is just plain fun and great to let the kids make on their own!

🥘 Ingredients

  • Bologna - Oscar Meyer, Bar S, Berks, or my favorite Alex's Meat German Bologna.
  • Bread - You can use any bread or try it with Texas toast or my kaiser rolls.
  • Eggs - Store bought or farm fresh.
  • American cheese - Nothing melts better than American cheese!
  • Salt & Pepper - To taste.
  • Butter - A good quality butter to "toast" the bread.
  • Garlic Salt - A sprinkle of garlic salt on the toasted bread, yum!

🔪 How to Make Fried Bologna and Egg Sandwich

  1. Toast the bread or buns. You can toast bread slices in a toaster, but if using buns I prefer to toast them in a dry pan before cooking the bologna and eggs. To do this in your frying pan or skillet, combine the optional butter and garlic salt and spread on each bun half. Then toast over medium heat until lightly golden. Remove and set aside.
  2. Fry the bologna. In a large skillet or frying pan, heat to medium and add the bologna slices in a single layer (typically 3-4 slices at a time). Cook on the first side until golden and browning slightly, about 2 minutes. Flip and cook the reverse side for a minute, until golden as well. Remove and set aside (repeat if necessary).
  3. Fry the eggs. Crack your eggs into the skillet or frying pan, still over medium heat. Break the yolk if desired, season with salt and pepper, and cook until the white is firm enough to flip or about 3 minutes.
  4. Flip and add cheese. Flip and cook the reverse side for one minute, add cheese slices and cover. Cook for an additional 30 seconds then remove from heat and assemble your fried egg and bologna sandwiches.
  5. Assemble the sandwich. Place the fried bologna on the bottom slice of bread or bun, top with the egg and melted cheese, then close with the second slice of bread or bun half. Serve immediately and enjoy.

Ingredients
 

  • 8 slices bologna (casing removed if needed)
  • 8 slices bread (or kaiser rolls)
  • 4 large eggs
  • 4 slices American cheese
  • each, salt & pepper (to taste)
  • 2 tablespoon butter (optional, softened - for toasting the bread or buns)
  • 1 teaspoon garlic salt (optional - for toasting the bread or buns)

(Note: 2x or 3x only changes the ingredient list)

    Been making sandwiches like this for years! Simple and delicious.

    The only thing I do different is I usually add some good mayo to the bread before closing up the sandwich.
