This Christmas Fruitcake truffles recipe takes a classic fruitcake and turns it into bite sized chocolate desserts in a snap! It only requires a few ingredients and there is no actual baking, you just need to melt the chocolate coating. It's a great way to use leftover fruitcake, too!
Christmas Cake Balls Recipe
It's not Christmastime without fruitcake, thankfully you can get that classic fruitcake flavor in many shapes and forms! There are fruitcake cookies, fruitcake magic bars, and these easy Christmas fruitcake truffles!
This recipe in particular is a great way to use up any leftover holiday fruitcake (though you can totally buy a fruitcake to make these, too). You don't even have to turn on your oven!

🥘 Ingredients For Christmas Fruitcake Truffles
You only need 3 ingredients to make these cake balls! I used my light fruit cake to make these truffles, though you can use whatever you have or purchase fruitcakes at the store.
- Fruitcake - 1 loaf of my light fruitcake (see recipe), or 14 ounces of store-bought fruitcake. You could use dark fruitcake, it will just have more of a molasses flavor. See light vs dark fruitcake for more info!
- Chocolate Almond Bark - 8 ounces of almond bark for coating the cake balls. You can also use other flavors of chocolate for drizzling or making alternate colors of truffles! I used dark chocolate, milk chocolate, and white chocolate.
- Shortening - Mixing 1 teaspoon of shortening in with the almond bark helps it to coat the truffles more smoothly.
- Christmas Sprinkles (optional) - They may be optional but they sure are fun!

🔪 How To Make Christmas Fruitcake Truffles
Anyone can make this easy Christmas confection! You will need a mixing bowl, a cookie scoop, and a microwave-safe bowl or double boiler for melting the almond bark.
You can roll your truffles larger or smaller if you prefer. One batch can make a whopping 64 truffles if using 1-tablespoon portions!
Make the Fruitcake Balls
- Crumble your fruitcake. Line a baking sheet with wax paper and set it aside. In a large mixing bowl, use your hands to crumble 1 loaf, or 14 ounces, of fruitcake. Add the optional juice or liquor if desired.
- Shape. Use a cookie scoop to scoop 1-tablespoon portions of fruitcake and use your hands to shape the crumbled fruitcake into balls. Pop the fruitcake balls in the fridge to chill for 20-30 minutes before coating.
Coat & Decorate the Truffles
- Melt almond bark. Use a double boiler or a microwave-safe bowl to melt 8 ounces of shaved almond bark and 1 teaspoon of shortening. If using the microwave, work in short 15-second increments, stirring between each one. *Repeat with all flavors of almond bark as needed, adding shortening to each one.
- Coat in chocolate. Use a fork to dip each of the fruitcake balls into the melted almond bark, rolling it around to coat it thoroughly. Gently tap off any excess chocolate and transfer them to the prepared baking sheet.
- Decorate. Top with Christmas sprinkles or drizzle with more chocolate if desired. Let the chocolate set before serving (you may set them quickly by putting them in the fridge).

💭 Tips & Notes
- Finely chopping the almond bark will help it melt much more quickly!
- Melt a variety of almond bark to make truffles in more than one color. You can also use contrasting colors to drizzle over the truffles in place of, or in addition to, the sprinkles! Add a teaspoon of shortening to each type of almond bark you use so that it melts smoothly. I used milk chocolate, dark chocolate, and white chocolate.
- A splash of rum, whiskey, bourbon, or brandy added to the crumbled fruitcake before forming the truffles will add a boozy extra punch of flavor! Alternatively, you could add a splash of pineapple juice, orange juice, or apple juice for an alcohol-free option.

Technically no, though they will last longer in the fridge. You can keep them at room temperature for 5-7 days.
This is a great make-ahead recipe if you know you will be having guests! Just refrigerate your truffles in an airtight container and be sure to serve them within 2 weeks.

- 6 oz pineapple juice (optional - or use orange juice or apple juice)
- 8 ounces chocolate almond bark (finely chopped, or white chocolate, or a combination *see note)
- 1 teaspoon shortening (to help the almond bark melt smoothly)
- Christmas sprinkles (optional)
Instructions
- Line a baking sheet with wax paper or parchment paper and set it aside. In a large mixing bowl, use your hands to finely crumble your fruitcake. Add the optional pineapple juice if desired and mix it into the crumbled fruitcake.
- Use a cookie scoop to scoop 1-tablespoon portions of fruitcake and use your hands to shape the crumbled fruitcake into balls. Pop the fruitcake balls in the fridge to chill for 20-30 minutes before coating.
- Use a double boiler or a microwave-safe bowl to melt the shaved almond bark and shortening. If using a double-boiler, add 1-2 inches of water to the bottom pot and bring it to a simmer. Top with the heat-safe bowl of almond bark and stir to melt.If using the microwave, work in short 15-second increments on high power, stirring between each one.
- Use a fork to dip each of the fruitcake balls into the melted almond bark, rolling it around to coat it thoroughly. Gently tap off any excess chocolate and transfer them to the prepared baking sheet.
