Best Blue Cheese Burger Recipe
There's something about blue cheese that really just makes a burger feel sophisticated and gourmet. It has the perfect sharp flavor that just complements the flavor of the beef really well.
I will say that blue cheese is definitely an acquired taste (I mean, how many kids do you see chowing down on some Gorgonzola?) However, if you haven't tried it in a while (or at all) go ahead and give it a shot! It really is delicious!

🥘 Blue Cheese Burger Ingredients
Here you have your common burger-making ingredients (plus some tasty blue cheese!) Go ahead and add your favorite toppings to the list as well!
- Ground Beef - 1½ pounds of ground beef. You'll want to use one with either an 85/15 or 80/20 ratio to ensure some juicy patties!
- Chives - 2 tablespoons of minced chives.
- Blue Cheese - 2 ounces of crumbled blue cheese. Not all blue cheese is equal, so pick your favorite variety! If you've never had blue cheese, you can choose a milder kind such as Danish Blue or Gorgonzola.
- Burger Seasoning - 1 teaspoon of burger seasoning. I love using my homemade blend but feel free to use your favorite brand!
- Worcestershire Sauce - ½ teaspoon of Worcestershire sauce.
- Buns - 3 hamburger buns (use your favorite kind!) If making ¼-pound burgers, go ahead and double the number of buns.
- Bacon - 3 slices of crispy bacon, already cooked.
- Red Onion - ½ of a medium-sized red onion, sliced.

🔪 How To Make A Blue Cheese Burger
These burgers are just as easy to make as any other kind of burger, and you can choose whether you want to prepare them on the stove or the grill! You'll need a mixing bowl, your grill or skillet, and a spatula to flip the patties!
With this recipe, you can make either three ½-pound burgers or six ¼-pound burgers.
- Make the beef mixture. In a large mixing bowl, mix together 1½ pounds of ground beef, 2 tablespoons of minced chives, 2 ounces of blue cheese crumbles, and ½ teaspoon of Worcestershire sauce.
- Preheat. Preheat your grill, frying pan, or skillet to the upper end of medium-high heat (about 425°F / 218°C on the grill).
- Stovetop: Add a tablespoon of extra virgin olive oil to the pan while it heats.
Grill: Clean and oil the grates. - Make patties. Meanwhile, form your meat mixture into three ½-pound patties (or six ¼-pound patties).
- Season. Once hot, generously season the tops of the patties with 1 teaspoon of burger seasoning and then immediately place them into the pan (or onto the grill) with the seasoned side facing down.
- Grill. Cook for about 4 minutes and then season the second side. Flip the patties and cook for an additional 3-4 minutes, or until they reach your desired level of doneness.
- Rest. Once cooked, remove the burger patties from the heat and allow them to rest for 5 minutes.
- Assemble. Assemble your burgers by placing the 3 bottom buns, the patties, some more blue cheese, 3 strips of bacon, and the red onion slices followed by the top bun.

Reheating Burgers
The best way to reheat your burger is in the oven. Place your patties on a metal wire rack over a baking sheet lined with foil and bake it at 400°F (205°C) for 3 minutes, flip it, and then cook the second side for an additional two minutes.

Yes! Allowing your burgers 5 minutes to rest gives them time to redistribute all of the juices back into the meat. If you skip the resting phase, all of the juices will run out of the patties when you cut them or bite into them!

Since burgers are ground beef, they should have an internal temperature of 160°F (71°C). Go ahead and pull the patties from the grill when they reach 155°F, as they will continue to cook another 5°F while resting (called 'carryover cooking').
