Instructions
Preheat your oven to 350°F (175°C) and lightly grease your 9x13 pan or 2.5-quart casserole dish.
In a large frying pan cook the bacon over medium-high heat until browned and crisp. Set aside and drain on paper towels until cooled slightly, then chop into small pieces while the sausage cooks.
Drain the excess grease from your skillet and add the pork sausage. Cook until browned, crumbling as it cooks, and then set aside.
While the sausage cooks, spread an even layer of frozen tater tots in your prepared baking dish.
Beat the eggs, milk, chives, and seasoning together. Add the cooled sausage, about half of the chopped bacon, and half of the shredded cheese then stir to combine.
Pour egg mixture over tater tots and bake at 350°F (175°C) for 30 minutes then remove from the oven and add the remaining shredded cheese and chopped bacon. Continue cooking an additional 10-15 minutes until the eggs are fully set in the center of your casserole.
Remove from oven and allow to cool slightly before slicing and serving.
Notes
You can use any pork breakfast sausage. The ground pork sausage that is available in your local grocery store or butcher will work, as will Jimmy Dean brand sausage in chubs (Hot, Mild, Country Mild, Regular, Maple) as well as their patties or links. Cook patties or links as directed on the package, then chop them into small pieces for the casserole.
Using room temperature ingredients helps your casserole to cook quickly and evenly. Set out your ingredients when starting and allow them to warm slightly as your follow the directions.
You can warm refrigerated eggs quickly by placing them in a bowl of warm water (tepid, not hot) for 5 minutes.
