Make Your Favorite Latte At Home
While I may always be in the mood for Starbucks, I am not always in the mood for getting into my car to get some. Instead, I'd much rather make all of my favorite drinks right at home!
I've already posted my recipe for an at-home Starbucks caffe mocha, my iced pumpkin spice latte, and now I've got this amazing DIY cinnamon dolce latte to try out! It is rich, incredibly creamy, and has just the right amount of sweetness!
🥘 Ingredients
Homemade Starbucks Cinnamon Dolce Syrup
- Water - 1 cup of water.
- Sugar - ¾ cup of white granulated sugar.
- Brown Sugar - ¼ cup of light brown sugar, packed.
- Cinnamon Sticks - 2 whole cinnamon sticks. For a stronger cinnamon flavor, break each stick in half.
- Vanilla - 1 teaspoon of pure vanilla extract.
Cinnamon Dolce Latte
- Coffee - 1 cup of strong-brewed coffee. If you have it, use Starbucks cinnamon dolce coffee.
- Milk - 1 cup of milk. Use your preferred kind!
- Cinnamon Dolce Syrup - 2 tablespoons of homemade cinnamon dolce syrup.

🔪 Instructions
Once you see how easy it is to make your own cinnamon dolce syrup, you'll never need to go to Starbucks again! All you will need is measuring cups, a saucepan, and a whisk.
This recipe is for 2 cups of coffee, but it will make enough cinnamon dolce syrup for several cups.
Making The Cinnamon Dolce Syrup
Step 1: Combine. Combine ¾ cup (150 grams) of sugar, ¼ cup (55 grams) of light brown sugar, 1 cup (237 milliliters) of water, and 2 whole cinnamon sticks (7 grams) in a saucepan.
Step 2: Boil. Bring the mixture to a boil over medium-high heat.
Step 3: Simmer. Simmer until the mixture thickens and clings to your spoon, then remove the pot from the heat and then stir in 1 teaspoon (5 milliliters) of vanilla extract.
Cinnamon Dolce Latte Assembly
Step 4: Assemble. Pour 1 cup (237 milliliters) of strong brewed coffee into a large mug and stir in 2 tablespoons (30 milliliters) of homemade Starbucks cinnamon dolce syrup.
Step 5: Add. Pour in 1 cup (237 milliliters) of milk.
Step 6: Serve. Top with whipped cream if desired, and serve immediately. Dust more cinnamon over the whipped cream, or sprinkle cinnamon sugar on top of your coffee.
💠Angela's Pro Tips & Notes
- I typically make my lattes with a strong cup of coffee, but you can use espresso for a more authentic beverage. In this case, I opted for the actual Starbucks cinnamon dolce coffee to start with.
- While milk is the standard for this drink, you can easily use your preferred non-dairy alternatives. Oat milk or almond milk would taste amazing!
- Enjoy your latte as-is, or top it with whipped cream and cinnamon sugar for a real treat.
- Adjust how much cinnamon dolce syrup you add to suit your tastes. For a sweeter drink, add more. If you want a stronger coffee flavor, use less.
- The copycat cinnamon dolce syrup is enough to make several coffee drinks.
- Add some ice to make this an iced latte.

I recommend drinking your latte immediately.
The cinnamon dolce syrup can be stored in a sealed container in the refrigerator for up to 1 month.
