    This fast and simple dessert includes basic pantry staples, with no need for any hard-to-find ingredients! The classic, sweet cinnamon flavor of snickerdoodles is even better when it’s in cake form!

    🥘 Ingredients

    This delicious snickerdoodle mug cake is the result of mixing some standard ingredients that you most likely already have! There’s no need to make an extra trip to the grocery store!

    Mug Cake

    • All-Purpose Flour – ¼ cup of flour (plus 2 tablespoons) leveled.
    • Sugar – 2 tablespoons of granulated sugar.
    • Baking Powder – ¼ teaspoon of baking powder, not baking soda.
    • Cinnamon – ¼ teaspoon of cinnamon.
    • Milk – ¼ cup of milk (room temperature).
    • Butter – 2 tablespoons of salted butter (melted and cooled).
    • Vanilla Extract – ½ teaspoon of vanilla extract.

    Cinnamon Sugar

    • Sugar – 1 tablespoon of granulated sugar.
    • Cinnamon – ¼ teaspoon of cinnamon.

    🔪 How To Make A Snickerdoodle Mug Cake

    This is an easy, straightforward recipe. All you need is a mug, a mixing bowl, a whisk, and your microwave and you are ready to go!

    This recipe is for a single serving so you don’t have to share! Double the recipe if you want to make 2 snickerdoodle mug cakes so that someone can eat one with you!

    Mix The Mug Cake Batter

    1. Mix dry ingredients. Whisk together ¼ cup of all-purpose flour, 2 tablespoons of sugar, ¼ teaspoon of baking powder, and ¼ teaspoon of cinnamon in a small mixing bowl.
    2. Add wet ingredients. Use your whisk to mix in ¼ cup of milk, 2 tablespoons of salted butter, and ½ teaspoon of vanilla. Mix it until it is smooth.

    1. Make the cinnamon sugar. In a separate cup or small bowl, combine 1 tablespoon of sugar and ¼ teaspoon of cinnamon.
    2. Layer. Scoop a large spoonful of batter into your mug. Then, top the batter with a spoonful of cinnamon sugar. Continue to alternate layers of batter and cinnamon sugar until you run out of batter. Lastly, top it with a final layer of cinnamon sugar.
    3. Microwave. Microwave on high for 1 - 1 ½ minutes or until done (*see note). Let it cool for a few minutes before eating.

    This snickerdoodle mug cake is delicious as-is, but you can always add a dollop of whipped cream or a drizzle of toffee sauce to make this easy treat even more amazing! A scoop of ice cream would also pair well with the cinnamon flavors. Enjoy!

    💭 Angela's Tips & Recipe Notes

    • A mug that is not tapered (smaller at the bottom and larger at the top, or vice versa) is best because it helps the cake cook evenly.
    • 14-ounce mugs will leave plenty of room for the batter to rise. If using a smaller mug, place a plate or paper towel underneath in the microwave to catch any spills.
    • Cook time may vary slightly depending on the model of your microwave and the size of your mug. After 1 minute, cook in 30-second increments until the top is springy to the touch and a toothpick inserted in the center comes out clean.
    • Storing: Mug cakes are best eaten fresh, but they are also delicious when they are cold! You can place any leftovers in an airtight container and refrigerate for up to 2-3 days.

    ❓ Why Is There No Egg In This Mug Cake?

    Think about it like this, a whole cake only requires 2 eggs or so. This single-serving mug cake would need only a portion of that, and 1 egg would be far too much. Too much egg will lead to a cake that is much denser.

    ¼ teaspoon of baking powder gives this snickerdoodle mug cake all the rise it needs.

    ❓ What Is Snickerdoodle Cake?

    Snickerdoodle refers to a white cake with buttery swirls of sugar and cinnamon throughout, the flavors of classic snickerdoodle cookies. Then, finish it off with a sprinkling of cinnamon sugar on top.

    ❓ Why Is My Mug Cake Rubbery?

    There are a few reasons why a mug cake may turn out rubbery. The first is overmixing the batter. Overmixing causes the gluten in the flour to develop and makes for a denser cake.

    Another reason is the use of too much baking powder. Too much may cause the cake to rise and fall, stretching the dough and leaving it rubbery.

    Overcooking your cake in the microwave is another way to give it a less than desirable rubbery texture.

    Ingredients
     

    Mug Cake

    • ¼ cup all-purpose flour (plus 2 tablespoons)

    Instructions
