In a small mixing bowl, whisk together the ¼ cup all-purpose flour, 2 tablespoon sugar, ¼ teaspoon baking powder, and ¼ teaspoon cinnamon until thoroughly combined.
Use your whisk to blend in the ¼ cup milk, 2 tablespoon salted butter, and ½ teaspoon vanilla extract. Mix until smooth. In a separate small bowl or cup, add and combine the 1 tablespoon sugar and ¼ teaspoon cinnamon.
¼ cup milk, 2 tablespoon salted butter, ½ teaspoon vanilla extract, 1 tablespoon sugar, ¼ teaspoon cinnamon
Scoop a large spoonful of batter into your mug. Then, top it with a spoonful of cinnamon sugar. Continue layering like this until out of the batter, ending with a layer of cinnamon sugar on top.
Microwave on high for 1-1 ½ minutes, or until done (*see note). Let cool for a few minutes before eating.
Notes
A mug that is not tapered (smaller at the bottom and larger at the top, or vice versa) is best because it helps the cake cook evenly.
14-ounce mugs will leave plenty of room for the batter to rise. If using a smaller mug, place a plate or paper towel underneath in the microwave to catch any spills.
Cook time may vary slightly depending on the model of your microwave and the size of your mug. After 1 minute, cook in 30-second increments until the top is springy to the touch and a toothpick inserted in the center comes out clean.
Mug cakes are best eaten fresh, but they are also delicious when they are cold! You can place any leftovers in an airtight container and refrigerate for up to 2-3 days.
