💭 Angela's Pro Tips & Notes
- Choosing the Right Mug: Select a mug with straight sides as this shape helps the cake cook more evenly. Avoid tapered mugs to ensure consistent heating and rising of your cake.
- Mug Size Matters: A 14-ounce mug is ideal as it provides ample space for the cake to rise without spilling over. If you're using a smaller mug, consider placing a plate or paper towel underneath it in the microwave to catch any potential spills.
- Microwave Variability: Keep in mind that cooking times may differ based on your microwave's model and the mug's size. Start with 1 minute of cooking, then continue in 30-second bursts, checking for doneness each time. The cake is ready when it feels springy to the touch, and a toothpick inserted in the center comes out clean.
- Fresh is Best, But...: While mug cakes are ideally enjoyed fresh and warm, they can also be savored cold. Store any leftovers in an airtight container in the refrigerator for 2-3 days. When you're ready to enjoy it, you can eat it cold or give it a quick warm-up in the microwave.
❓ Recipe FAQs
Think about it like this: a whole cake only requires 2 eggs or so. This single-serving mug cake would need only a portion of that, and 1 egg would be far too much. Too many eggs will lead to a cake that is much denser.
¼ teaspoon of baking powder gives this snickerdoodle mug cake all the rise it needs.
Snickerdoodle refers to a white cake with buttery swirls of sugar and cinnamon throughout, the flavors of classic Snickerdoodle cookies. Then, finish it off with a sprinkling of cinnamon sugar on top.
There are a few reasons why a mug cake may turn out rubbery. The first is overmixing the batter. Overmixing causes the gluten in the flour to develop and makes for a denser cake.
Another reason is the use of too much baking powder. Too much may cause the cake to rise and fall, stretching the dough and leaving it rubbery.
Overcooking your cake in the microwave is another way to give it a less-than-desirable rubbery texture.

📖 Recipe Card
Snickerdoodle Mug Cake
Ingredients
Mug Cake
- ¼ cup all-purpose flour (plus 2 tablespoons)
- 2 tablespoon sugar
- ¼ teaspoon baking powder
- ¼ teaspoon cinnamon
- ¼ cup milk (room temperature)
- 2 tablespoon salted butter (melted and cooled)
- ½ teaspoon vanilla extract
Cinnamon Sugar
- 1 tablespoon sugar
- ¼ teaspoon cinnamon
Instructions
- In a small mixing bowl, whisk together the ¼ cup all-purpose flour, 2 tablespoon sugar, ¼ teaspoon baking powder, and ¼ teaspoon cinnamon until thoroughly combined.
- Use your whisk to blend in the ¼ cup milk, 2 tablespoon salted butter, and ½ teaspoon vanilla extract. Mix until smooth. In a separate small bowl or cup, add and combine the 1 tablespoon sugar and ¼ teaspoon cinnamon.
- Scoop a large spoonful of batter into your mug. Then, top it with a spoonful of cinnamon sugar. Continue layering like this until out of the batter, ending with a layer of cinnamon sugar on top.
- Microwave on high for 1-1 ½ minutes, or until done (*see note). Let cool for a few minutes before eating.
Notes
- A mug that is not tapered (smaller at the bottom and larger at the top, or vice versa) is best because it helps the cake cook evenly.
- 14-ounce mugs will leave plenty of room for the batter to rise. If using a smaller mug, place a plate or paper towel underneath in the microwave to catch any spills.
- Cook time may vary slightly depending on the model of your microwave and the size of your mug. After 1 minute, cook in 30-second increments until the top is springy to the touch and a toothpick inserted in the center comes out clean.
- Mug cakes are best eaten fresh, but they are also delicious when they are cold! You can place any leftovers in an airtight container and refrigerate for up to 2-3 days.
