This crockpot London broil is the perfect savory, hearty beef dinner for a family meal or as an easy weekend dinner. The beef is seared, then cooked low and slow in your slow cooker until it's deliciously fork tender. Add some baby potatoes, carrots, green beans, and gravy for the ultimate tasty, satisfying roast dinner that everyone will love.

I love a Dutch oven or grilled London broil, but my crock pot recipe makes an even more tender London broil. My slow cooking method makes for a super tender roast and takes very little effort, making it perfect for dinner on busy weekdays.

All this London broil crock pot recipe needs is a sprinkle of steak seasoning and a quick sear in a skillet before your slow cooker takes over the work. Plus, I added baby potatoes, carrots, and green beans to complete this hearty and comforting meal.

🥘 Ingredients

  • London Broil - You could use any cut of beef between 2-3 pounds, whatever beef roast you can find at your local grocery store.
  • Steak Seasoning - Your favorite steak seasoning, my homemade steak seasoning, (or my pot roast seasoning).
  • Cooking Oil - I used beef tallow, or you can use your preferred high-heat cooking oil.
  • Beef Broth - Beef broth or stock to keep the roast moist in the slow cooker.
  • Butter - The butter goes right on top of the roast to melt in the crockpot, keeping the beef moist and flavorful.

Optional Veggies

  • Baby Potatoes - A bag of baby potatoes (red, yellow, or mixed potatoes).
  • Baby Carrots - Whole baby carrots or sliced large carrots. I never peel my carrots, that's totally up to you.
  • Green Beans - Fresh or frozen green beans make an excellent addition. No need to thaw them first.

🔪 How To Cook London Broil In A Crockpot

This roast becomes hands-off after you score, season, and sear your beef. You will need a baking sheet, a large skillet, kitchen tongs, a knife, and a crockpot.

A 2.5-pound London broil yields roughly 5 servings. Plus, if you opt for the veggies the tender potatoes, carrots, and green beans make the perfect side dish.

Top Tip: Room Temperature Meat

If time allows, season your beef and let it come to room temperature for at least 40 minutes (2 hours is best, and up to 8 hours) before searing it for the best results.

Step 1: Prep. Place your 2.5-pound (1.13 kilograms) London broil on a baking sheet. Use a chef's knife to score the London broil in a criss-cross pattern along the top and bottom sides of the beef (photos 1, 2). Season generously on all sides with 1 tablespoon of steak seasoning or pot roast seasoning (photo 3).

Step 2: Sear. Heat a cast iron skillet with 1 tablespoon of extra virgin olive oil over medium-high heat and let it heat up until the oil shimmers and is just about to begin smoking. Sear the London broil for 2-3 minutes or until lightly browned on each side. Use tongs to lift and sear the sides and edges as needed (photo 4).

Step 3: Transfer. Transfer the seared London broil into your slow cooker, pour the 3 cups of beef broth over the top, and add 2 tablespoons of butter (photos 5, 6). Cover and seal with the lid.

Step 4: Cook roast. Cook on the low setting for 6-8 hours or on high for 3-4 hours. If using vegetables, add 1 pound (453.59  grams) of baby potatoes and ½ pound (226.8 grams) of baby carrots at the last hour, then add ½ pound (226.8 grams) of green beans for the final 30 minutes.

Step 5: Cut and serve. Remove the steak from the slow cooker and place it on a cutting board. It should be fall-apart tender and easy to shred, or you can slice against the grain before serving with the potatoes, carrots, and green beans.

💭 Angela's Pro Tips & Recipe Notes

  • Seasoning and resting. For optimal flavor, season the London broil and let it rest at room temperature for 40 minutes to 2 hours before cooking. This enhances the meat's flavor and tenderness.
  • Liquid options. You can use 3 cups of beef broth or mix it up with 1 cup of red wine and 2 cups of beef broth for added depth of flavor.
  • Making London broil gravy. To create a delicious gravy, reserve 1 cup of beef broth. Mix 1 tablespoon of cornstarch with 1 tablespoon of cold water to form a slurry. Whisk this into the beef broth and drippings in a saucepan. Bring it to a boil, then remove from heat. For thicker gravy, increase the cornstarch by 1 tablespoon for each additional cup of liquid.   • Slow cooking Time. Cook on low heat for optimal tenderness (Do not try to speed it up by cooking on high). This slow cooking process allows the flavors to meld and the meat to become tender.

🥡 Storing & Reheating

Wrap any leftover beef (after it's fully cooled) in plastic wrap. Then, place it in an airtight container in the fridge for up to 3-4 days.

Store leftovers in a freezer-safe storage bag. Wrap it in heavy-duty aluminum foil first to avoid frostbite. Thaw in your refrigerator overnight before reheating, and enjoy it within 3 months.

Reheating

For an individual serving, place your leftovers in the microwave for 1-2 minutes.

For larger amounts, preheat your oven to 375°F (190°C). Place your beef leftovers in a baking dish with a splash of beef broth and cover it with aluminum foil. Bake for 15 minutes or heat through to your liking.

❓ How Long Should London Broil Rest Before Slicing?

I recommend letting your London broil rest on a cutting board for 5-10 minutes. Slice against the grain before serving with your tender baby potatoes, carrots, and green beans.

❓ What Cut Of Meat Should I Use For My Crockpot London Broil?

A London broil dish is typically made with a top round roast, flank steak, or top sirloin. Any low-fat cut of lean, tough, and thick beef will work in this recipe.

❓ How Do I Know When My Crockpot London Broil Is Done?

When your London broil is tender and almost falling apart, it's time to take it out of the crockpot. The low and slow method will take 6-8 hours, so you could check with a fork and cook until it reaches that point. It's very important not to overcook a London broil, so make sure to check between those hours.

❓ Is it necessary to sear the beef before placing it in the Crockpot?

While it's not absolutely necessary, searing the beef on high heat in a skillet before slow cooking can enhance its flavor and texture.

Crockpot London Broil

This slow cooker London broil cooks up tender and flavorful in the crockpot with baby potatoes, carrots, and green beans. It’s an easy one-pot meal that’s perfect for busy nights or a cozy weekend dinner.

Ingredients
 

  • 2.5 lb London broil
  • 1 tablespoon steak seasoning (or pot roast seasoning)
  • 1 tablespoon olive oil (extra virgin)
  • 3 cups beef broth
  • 2 tablespoon butter
  • 1 lb baby potatoes (up to 1.5 pounds of red, yellow, or mixed potatoes)
  • ½ lb baby carrots
  • ½ lb green beans

(Note: 2x or 3x only changes the ingredient list)

Instructions
 

  • Place your 2.5 lb London broil on a baking sheet. Use a chef's knife to score the London broil in a criss-cross pattern along the top and bottom sides of the beef. Season generously on all sides with 1 tablespoon steak seasoning (or pot roast seasoning).
  • Heat a cast iron skillet with the 1 tablespoon olive oil over medium-high heat and let it heat up until the oil shimmers and is just about to begin smoking. Sear the beef for 2-3 minutes or until lightly browned on each side. Use tongs to lift and sear the sides and edges as needed.
  • Transfer the seared roast into your slow cooker and add the 3 cups beef broth and 2 tablespoon butter. Cover and seal with the lid.
  • Cook on the low setting for 6-8 hours or on high for 3-4 hours. Add the 1 lb baby potatoes and ½ lb baby carrots at the last hour then add the ½ lb green beans for the final 30 minutes.
  • Remove the steak from the slow cooker and place it on a cutting board. Slice against the grain or pull apart before serving with the potatoes, carrots, and green beans.

Notes

  • I used a 2.5-pound cut of London broil, you could use any London broil between 2-3 pounds.
  • For best results, season your London broil and allow it to sit at room temperature for 40 minutes - 2 hours max if time allows.
  • It's optional to use 1 cup of red wine and 2 cups of beef broth in place of the 3 cups of beef broth if desired.
  • To make a London broil gravy: Measure out the beef broth, use 1 tablespoon of cornstarch and 1 table of cold water to make a slurry. Whisk the slurry into 1 cup of beef broth and beef drippings, heat in a saucepan until it reaches a boil then remove from heat. Increase the cornstarch by 1 tablespoon per cup of broth and drippings.   • To store: Wrap any leftover slow cooker London broil (after it's fully cooled) in plastic wrap. Then place it in an airtight container in the fridge for up to 3-4 days.
  • To freeze: Store cooked London broil leftovers in a freezer-safe storage bag. Make sure to wrap it in heavy-duty aluminum foil first to avoid frostbite. Thaw in your refrigerator overnight before reheating and enjoy it within 3 months.

    If I want to do two together should I double the time??

      You will need to increase the cook time, but it should still cook in 8-9 hours. Check the tenderness of the meat at 8 hours to determine if they need the additional hour. Hope that helps!

    If you’re cooking on low, the meat was great at 8 hours, however, you can’t wait until the final hour to cook your potatoes, carrots and green beans. I had to raise the temp to high for another 2 hours before they were tender. If cooking on low, I would add them half way through.
