Individual Microwave Coffee Cake
This cinnamon coffee cake mug cake is a personal favorite of mine. Having this sweet cinnamon vanilla cake with a crumbly cinnamon streusel topping all to myself makes any day better!
Mug cakes are all the rage, and it's easy to understand why. There are so many mug cake recipes to choose from in just about any flavor you can imagine!
🥘 Ingredients
If you do any baking, these ingredients will all be familiar. You probably already have them in your kitchen!
Mug Cake
- Brown Sugar - 2 tablespoons of brown sugar.
- Baking Powder - ¼ teaspoon of baking powder (not baking soda).
- Cinnamon - ¼ teaspoon cinnamon.
- Vanilla Extract - ½ teaspoon of vanilla extract.
- Milk - ¼ cup of milk; any percentage will work.
- Butter - 1 ½ tablespoons of melted butter.
- Salt - A pinch of salt (*see note).
- All-Purpose Flour - ¼ cup of all-purpose flour.
Crumb Topping
- Butter - 1 tablespoon of softened butter.
- Brown Sugar - 2 tablespoons of brown sugar.
- All-Purpose Flour -1 tablespoon of all-purpose flour.
- Cinnamon - ¼ teaspoon of cinnamon.

🔪 How To Make A Coffee Cake Mug Cake
This personal dessert coffee cake recipe is incredibly easy to follow! You will need 2 small mixing bowls, a rubber spatula, and a mug.
- Mix. In a small mixing bowl, combine 2 tablespoons of brown sugar, ¼ teaspoon of baking powder, ¼ teaspoon of cinnamon, ½ teaspoon of vanilla extract, ¼ cup milk, 1 ½ tablespoons melted butter, and 1 pinch of salt. Mix well until everything is smooth and evenly distributed. Then add ¼ cup all-purpose flour and mix until smooth again.
- Make crumb topping. In another small mixing bowl, combine the crumb topping ingredients (1 tablespoon softened butter, 2 tablespoons brown sugar, 1 tablespoon all-purpose flour, and ¼ teaspoon cinnamon). Mix until a crumb-like texture is formed.
- Pour into mug. Add your cake batter to your microwave-safe mug and top it with the prepared crumb mixture.
- Bake. Microwave the coffee cake mug cake for 1-1 ½ minutes, or until baked all the way through (*see note). Let your cake sit in the microwave for at least 1 minute to rest and cool before eating.
This dessert mug cake is wonderful as-is, but a drizzle of toffee sauce or some whipped cream never hurts! Then kick back, relax, and enjoy some dessert all to yourself!

- Salt Measurement: A pinch of salt equates to approximately 1/16th of a teaspoon, just enough to subtly enhance the flavors in your mug cake.
- Mug Selection: Choose a mug with straight sides for even cooking. A uniformly shaped mug ensures your cake cooks evenly and always comes out perfectly.
- Prevent Overflow: Place a paper towel under the mug before cooking to keep your microwave clean. This simple step will catch any batter that overflows, making cleanup a breeze.
- Doneness Test: Determine if your mug cake is ready by inserting a toothpick into the center. A clean toothpick indicates a fully cooked cake, while batter residue means it needs a bit more time. Microwave in short increments until done.
- Storing Leftovers: Ideally, enjoy your mug cake fresh and warm. However, if you have leftovers, store them in an airtight container in the refrigerator for 2-3 days. The cake is also tasty when enjoyed cold, so there's no need to reheat unless you prefer it warm.

Coffee Cake Mug Cake (Easy Microwave Dessert!)
Ingredients
Mug Cake
- 2 tablespoon brown sugar
- ¼ teaspoon baking powder
- ¼ teaspoon cinnamon
- ½ teaspoon vanilla extract
- ¼ cup milk
- 1 ½ tablespoon butter (melted, cooled slightly)
- 1 pinch salt
- ¼ cup all-purpose flour
Crumb Topping
- 1 tablespoon butter (softened)
- 2 tablespoon brown sugar
- 1 Tbsp all-purpose flour
- ¼ teaspoon cinnamon
(Note: 2x or 3x only changes the ingredient list)
Instructions
- In a small mixing bowl combine all mug cake ingredients except the flour (and not the crumb topping ingredients). Mix until everything is well combined and smooth. Then mix in the flour until smooth again.
- In another small bowl, combine all of the crumb topping ingredients. Use a fork to mix the ingredients together until a crumb-like texture is formed.
- Pour the cake batter into a microwave-safe mug and top it with the crumb mixture.
- Microwave the mug cake for 1-1 ½ minutes, or until baked through. Leave it in the microwave to rest for at least 1 minute before serving.
Notes
- A pinch of salt is roughly 1/16th of a teaspoon.
- A mug that is not tapered and is the same size all the way around will cook your mug cake the most evenly.
- Place a paper towel beneath your coffee mug when baking in case of overflow.
- To check if the mug cake is baked through, stick a toothpick in the center. If it comes out clean, it is ready. If it comes out with wet batter on it, microwave it for a few more seconds and check again.
- Your mug cake is best right after baking but should you need to refrigerate it, do so in an airtight container for 2-3 days. This equally delicious when served cold, so no need to reheat!
