My gourmet s'mores are a classic treat whether you roast them around a campfire at a campsite or around the fire pit in your backyard. Here are 3 different kinds of s'mores that still feature a perfectly gooey roasted marshmallow. These unique ingredients will make s'mores like you've never had before.

These gourmet s'mores combine fun new flavors in a new twist on classic campfire s'mores. You can even put together a 'build-your-own s'mores' bar for all of your campers to assemble their own custom creations.
🥘 Ingredients
To make these tasty treats as easy as possible, they combine store-bought components with the exception of the roasted berries. In addition to some jumbo s'mores marshmallows (roasting marshmallows, or 'giant roasters) or gourmet marshmallows, you'll need these ingredients:
Roasted Berries S'mores
- Stroopwafels - Two stroopwaffle cookies per s'more.
- Hershey's Bars - Hershey's milk chocolate bars with 4 chocolate squares per s'more.
- Roasted Berries - One batch of my sweet, syrupy, roasted berries using about 2 tablespoons per s'more (more or less can be used.)
Chocolate Covered Strawberries S'mores
- Chocolate Graham Crackers - Chocolate graham crackers broken in half.
- Strawberries - Fresh strawberries, washed and sliced.
- Ghirardelli Chocolate Sauce - A squeeze bottle of chocolate sauce for desserts or ice cream. Use roughly ½ a tablespoon per s'more.
Samoa S'mores
- Fudge Stripe Cookies - The Keebler brand is the most common, but some stores have their own store brand. Girlscout Samoa cookies work amazingly well, too.
- Salted Caramel - Salted caramel sauce for drizzling, roughly 1 teaspoon per s'more, or you could try my homemade toffee sauce.
- Toasted Coconut - Toasted coconut (*see note), roughly a ½ tablespoon per s'more.

🔪 How To Make Gourmet S'mores
Each type of s'more comes down to layering the ingredients and closing them up. It's as simple as that. You'll need your usual s'mores tools (like a marshmallow roasting stick) and a knife and cutting board.
Roasted Berry Smores
Build s'mores. Lay out 8 of the 16 stroopwafel cookies and break each of the 4 Hershey's bars in half so you are left with 8 squares of 4. Place one of he chocolate squares on a stroopwafel, then add the roasted marshmallow.
Close. Divide the 1 cup (155 grams) of roasted berries between each s'more and spoon it over the marshmallow. Close with a second stroopwafel.
Chocolate Covered Strawberries S'mores
Build s'mores. Break 8 chocolate graham crackers in half and lay them out. Divide the ¾ cup (108 grams) strawberries equally and place them on the bottom half of the graham cracker.
Close. Add the 8 roasted marshmallows then drizzle a portion of the ¼ cup (76 grams) Ghirardelli chocolate sauce evenly over each of them and close the s'mores.
Samoa S'mores
Build s'mores. Lay out 16 fudge stripe cookies and drizzle 8 teaspoons of salted caramel (1 teaspoon per cookie) on to half of them. Sprinkle ¼ cup (20 grams, *see note) of toasted coconut over the top of the caramel.
Close. Top each of the 8 cookies with a roasted marshmallow and close the s'mores.

💭 Angela's Pro Tips & Recipe Notes
- Make indoor s'mores. If you're craving s'mores but don't have a fire pit, roast marshmallows over a gas stove flame, using a kitchen torch, or pop them under the oven broiler for a few seconds. Or, swap marshmallows for marshmallow fluff.
- Stroopwafels aren't as uncommon as you'd think. You can find the stroopwafel cookies by the Pepperidge Farms cookies in most grocery stores.
- Toasting your own coconut is simple. You can toast shredded sweetened coconut in a skillet, even over a campfire. Keep it off the direct heat and stir until golden, or over medium heat if toasting the coconut on the stovetop. Transfer to a clean dish immediately once toasted to stop the cooking process.
- Enjoy your s'mores in the moment. They are best when they are fresh and the marshmallow is still warm.

Peanut Butter Cup S'mores
Honey graham crackers + toasted marshmallow + Reese’s Peanut Butter Cup. The gooey marshmallow melts perfectly into the chocolate and peanut butter center.
S’moreos (Oreo S’mores)
Split Oreo cookies in half (or use two whole ones) + toasted marshmallow + Hershey's milk chocolate square.
They have an irresistably crunchy, creamy, and extra chocolatey cookies and cream flavor.
Shortbread S’mores
Shortbread cookies + marshmallow + dark chocolate square.
Rich and buttery with a more refined twist than the classic graham cracker.
Nutella S’mores
Graham crackers + Nutella + roasted marshmallow.
Everyone's favorite hazelnut spread makes for the perfect s'mores with a creamy flavor boost.
Snickers S’mores
Graham crackers + toasted marshmallow + slice of Snickers bar
Caramel, nougat, peanuts, and chocolate all packed into one gooey, crunchy bite.
Raspberry Jam S’mores
Graham crackers + raspberry jam + toasted marshmallow + white or dark chocolate.
Sweet, tart, and totally delicious. Like a chocolate-covered raspberry in s’mores form (this can be done with any of your favorite fruit jams).
Chocolate Chip Cookie S’mores
Two chocolate chip cookies + marshmallow + chocolate bar.
Soft, warm, chewy, and packed with chocolatey goodness.

- 8 S'mores marshmallows (Also called "giant roasters", roasted)
- 1 cup roasted berries (2 tablespoons per s'more)
Chocolate Covered Strawberries S'mores
- 8 chocolate graham crackers (broken in half)
- ¾ cup strawberries (sliced)
- 8 S'mores marshmallows (Also called "giant roasters", roasted)
- ¼ cup Ghirardelli chocolate sauce (½ a tablespoon per s'more, for drizzling)
Samoa S'mores
- 16 fudge stripe cookies
- 8 teaspoon salted caramel (1 teaspoon per s'more)
- ¼ cup toasted coconut (½ a tablespoon per s'more)
- 8 S'mores marshmallows (Also called "giant roasters", roasted)
(Note: 2x or 3x only changes the ingredient list)
Instructions
Roasted Berry Smores
- On the bottom 16 stroopwafel cookies, place the 4 Hershey's bars chocolate square, then add the roasted 8 S'mores marshmallows. (*see note)
- Spoon a generous portion of the 1 cup roasted berries over the marshmallow. Close with a second stroopwafel.
Chocolate Covered Strawberries S'mores
- On the bottom half of one piece of the 8 chocolate graham crackers , add the sliced ¾ cup strawberries and top them with a roasted 8 S'mores marshmallows.
- Drizzle with ¼ cup Ghirardelli chocolate sauce. Close with the second half of the chocolate graham cracker.
Samoa S'mores
- On the bottom of one of the 16 fudge stripe cookies add a drizzle of 8 teaspoon salted caramel. Sprinkle ¼ cup toasted coconut over the top (*see note).
- Add the roasted 8 S'mores marshmallows then sandwich it closed with a second stripe cookie.
Notes
- You can find stroopwafel cookies in the cookie aisle.
- Shredded sweetened coconut can be toasted in a skillet, even over a campfire. Keep it off the direct heat then transfer to a clean bowl once toasted.
