Easy Homemade Chicken Quesadillas Recipe
There are so many reasons why I love these tasty chicken quesadillas! Not only do they taste amazing, but they are also so incredibly easy to make (and did I mention they take less than 30 minutes to prepare?)
Enjoy them by themselves for a simple lunch or add on some tasty side dishes for a well-rounded dinner! They are incredibly versatile, so go ahead and add in any extra toppings you may like!

🥘 Chicken Quesadillas Ingredients
These quesadillas only need some basic ingredients. You can even use up any leftover chicken you may have in the fridge!
- Olive Oil - 1 tablespoon of extra virgin olive oil.
- Chicken Breasts - 1 pound of chicken breasts, cut into bite-sized pieces. You could also use leftover chicken, rotisserie chicken, or even canned chicken!
- Chicken Taco Seasoning - 1 tablespoon of chicken taco seasoning for some bold flavors! Try out my favorite homemade spice blend, or just use your own!
- Tortillas - 8 large flour tortillas.
- Mexican Cheese - 1 cup of shredded Mexican cheese blend.

🔪 How To Make Chicken Quesadillas
If you've never made quesadillas before, you're going to be shocked by how easy they are to make! You'll need a large skillet, a cutting board, a knife, and a wooden spoon.
This recipe will make 4 large chicken quesadillas.
- Heat the oil. Place a large skillet over medium-high heat and add 1 tablespoon of extra virgin olive oil.
- Cook the chicken. Once hot, add 1 pound of diced chicken and 1 tablespoon of chicken taco seasoning, tossing to ensure all of the chicken is well coated. Saute the chicken, stirring occasionally, until completely cooked through. Then, remove the chicken from the skillet and set it aside.
- Assemble the quesadillas. Add a little more oil to the skillet, if necessary, and then place one tortilla into it. Sprinkle ¼ of the cooked chicken as well as ¼ of the shredded cheese onto the tortilla. Place a second tortilla on top and gently press down with your spatula.
- Cook. Cook the chicken quesadilla for 3-4 minutes per side, or until the tortillas have browned and the cheese is melted. Repeat the process for each quesadilla.
- Serve. If desired, cut your quesadillas into wedges. Then, serve immediately.
Serve these quesadillas with some sour cream, guacamole, or salsa. You can also add some sides of Mexican rice and refried beans for a full meal! Enjoy!
💭 Tips & Notes
- This recipe is fantastic for using up some rotisserie chicken, leftover chicken, or even canned chicken!
- If desired, you can add some tasty bell peppers or onions! Just saute them before adding the chicken.
- For some added heat, add in a pinch of crushed red pepper flakes when you season the chicken.
- I like using two tortillas and pressing them together with a spatula. However, you could also use one tortilla and just fold it over on itself.
🥡 Storing & Reheating
Before storing, your quesadilla needs to be completely cool. Then, place it into an airtight container in the fridge for 5 days at most.
To freeze, place your chicken quesadillas into a Ziploc bag and store them in the freezer for up to 3 months.
Reheating Chicken Quesadillas
Reheat your chicken quesadillas in the oven at 350°F (175°C) for about 10 minutes or until they are nice and hot. Of course, you can also heat them in the microwave using 30-second bursts.

You can essentially think of the cheese as the glue for your quesadilla. Once you add the top tortilla, it is important to use your spatula to gently yet firmly press down on the quesadilla to ensure it sticks together.
This really depends on the size of the tortillas as well as just your personal preference. You can create a full quesadilla by using two tortillas- one for the top and one for the bottom. Alternatively, you can prepare a half quesadilla by just folding over the one tortilla (which may be ideal if using very large tortillas or you are not super hungry).
Since your tortillas are what will be in direct contact with the skillet, it is important to remember that they can easily burn. Therefore, it is best to cook your quesadillas over medium or medium-high heat. You want the oil to be hot enough to cook the tortillas, without them just soaking the oil up and becoming soggy.
