Easy Oven-Baked Scotch Eggs Recipe
I don't know if I would call Scotch eggs a snack, an appetizer, or a main dish. Essentially, I feel like you can enjoy them any time of the day!
If you've never tried Scotch eggs before, then you are in for a real treat! Not to mention, this oven-baked version is easier, healthier, and much less messy than dealing with a deep fryer!

🥘 Baked Scotch Eggs Ingredients, Notes, & Substitutions
You only need a few ingredients for these delicious eggs! You can start with some traditional hard-boiled eggs, or try making them in your air fryer or Instant Pot!
- Ground Sausage - 1 pound of ground sausage, ground beef, or a combination of them.
- Seasonings - ½ teaspoon of dried thyme (or a thyme substitute) and ¼ teaspoon each of onion powder, salt, and pepper.
- Hard-Boiled Eggs - 4 hard-boiled eggs that have been cooled and peeled.
- Flour - Some all-purpose flour for rolling your eggs in.
- Egg - 1 large egg, beaten.
- Panko - ¾ cup of panko breadcrumbs, or use a panko alternative.

🔪 How To Make Baked Scotch Eggs
Scotch eggs are surprisingly easy to make, as you are really only assembling them and then putting them into the oven! You will need a baking sheet, a couple of mixing bowls, and some measuring spoons.
This recipe is for 4 Scotch eggs, but feel free to double it to feed a larger group!
Step 1: Preheat. Preheat your oven to 400°F (205°C/Gas Mark 6) and line a baking sheet with parchment paper.
Step 2: Season the meat. In a large bowl, combine 1 pound (454 grams) of ground sausage, ½ teaspoon (0.5 grams) of dried thyme, ¼ teaspoon (0.5 grams) of onion powder, and ¼ teaspoon (0.5 grams) of both salt & pepper. Divide the mixture into 4 equal-sized patties.
Step 3: Coat the eggs. Pick up one of your peeled 4 hard-boiled eggs and roll it in some all-purpose flour. Then, place each egg into the center of the patties and gently press the meat around the egg, smoothing out any seams.
Step 4: Roll in breadcrumbs. Beat 1 large egg (50 grams) in one bowl and place ¾ cup (45 grams) of panko breadcrumbs into a second bowl. Dip each wrapped Scotch egg in the beaten egg and then coat them in breadcrumbs.
Step 5: Bake. Place the coated eggs onto your prepared baking sheet and bake in the oven at 400°F (205°C/Gas Mark 6) for 30 minutes, or until the sausage is cooked through.
Step 6: Serve. Remove from the oven and serve immediately.
🍽️ What To Serve With Scotch Eggs
Serve your Scotch eggs with your favorite dipping sauce! Mustard (or mustard sauce), ketchup, and chipotle aioli are all great options.
Add a side of air fryer potato chips, sweet potato fries, or a garden salad to complete the meal. Enjoy!

- Rolling the eggs in flour will help the sausage to properly stick to them.
- Make sure you coat your eggs in an even layer of meat so that they cook evenly.
- You can also make these eggs in the air fryer! Air fry them at 350°F (175°C) for 15-20 minutes or until the sausage is cooked all the way through.
- Do not use hard-boiled eggs that are overcooked. If you like your eggs to have a softer yolk, use eggs that are soft or medium-boiled. Remember that they will cook slightly more in the oven.
🥄 Make Ahead Options
You can prepare your eggs 1 day in advance by coating the hard-boiled eggs in the sausage mixture and then storing them in a sealed container in the fridge. When ready, you can coat them with the egg and breadcrumbs and then bake as directed.

Let your Scotch eggs cool completely, and then place them into a container lined with a paper towel. Store in the fridge for up to 3 days.
I do not recommend freezing Scotch eggs as the texture will be affected.
Reheating Scotch Eggs
Scotch eggs can be enjoyed warm, cold, or at room temperature (making them perfect for picnics!)
Reheat your Scotch eggs on a baking sheet in the oven at 350°F (175°C/Gas Mark 4) for 10 minutes or until hot.

Your Scotch eggs will split during the cooking process if they aren't properly covered with meat. Any seams or openings in the coating can cause this to happen. Before baking, make sure the egg is properly sealed with meat.
Absolutely! Instead of using standard chicken eggs, use a smaller egg variety (like quail eggs). Of course, you will also need less meat per egg. Bake like normal, but keep an eye on them in the oven as they will cook faster.
Yep! Traditional Scotch eggs are hard-boiled. However, you can enjoy them with a runny yolk, too! Just cook your eggs to your liking (soft-boiled, medium-boiled, etc.) before peeling them and continuing with the recipe.
