Elevate your holiday appetizer game with these antipasto skewers that effortlessly blend a variety of Italian flavors! They're easy to assemble by simply threading cured meats, olives, cheeses, and marinated vegetables onto wooden skewers.

If you're planning a party, you can assemble the skewers ahead of time and keep them in the fridge until guests arrive! Whether it's a casual hangout or a more formal affair, antipasto skewers are perfect for any occasion!

🥘 Ingredients

Veggies

  • Green Leaf Lettuce - 6 leaves green leaf lettuce (rinsed and dried).
  • Olives - 1 cup of whole pitted black or green olives. Try stuffed olives for more flavor!
  • Marinated Mushrooms - 4 ounces of marinated mushrooms (or artichoke hearts, or both).
  • Roasted Red Bell Peppers - 4 ounces of roasted red bell peppers.

Meats

  • Salami - 12 folded slices of salami (Genoa, soppressata, finocchiona, or capocollo).
  • Pepperoni - 12 folded slices of pepperoni.
  • Prosciutto - 12 folded slices of prosciutto.

Cheeses

  • Mozzarella - 8 ounces of mozzarella pearls. Marinating them in Italian dressing beforehand is optional!
  • Swiss Cheese - 6 ounces of cubed Swiss cheese or a Swiss cheese substitute.
  • Colby Jack Cheese - 6 ounces of cubed Colby jack cheese.

🔪 Instructions

Antipasto skewers are easy finger food that anyone can make regardless of your skill set in the kitchen! Grab a knife, cutting board, and some wooden skewers to get started!

As written this recipe is for twelve 12-inch skewers, but it's one of those appetizers that is really easy to scale up or down as needed.

Step 1: Fold Lettuce Squares. Cut 6 leaves (87 grams) of green leaf lettuce in half horizontally. Then, cut each half in half vertically and fold each of the 24 pieces into a square of lettuce.

Step 2: Assemble. String each skewer with the ingredients alternating between a lettuce square. Use 1 cup (135 grams) of black and/or green olives, 4 ounces (113.4) of marinated mushrooms, 4 ounces (113.4) of roasted red bell peppers, folded meats (12 slices (113.4 grams) each of salami, pepperoni, and prosciutto), and cheeses (8 ounces (226.8 grams) of mozzarella pearls, 6 ounces (56.7 grams) of Swiss cheese, and 6 ounces (170.1 grams) of Colby jack cheese).

Step 3: Refrigerate or serve. Cover and refrigerate until ready to serve (up to 24 hours).

💭 Angela's Pro Tips & Recipe Notes

  • For extra flavor, I marinate the mozzarella pearls in Italian dressing for at least 2 hours up to overnight before assembling my skewers. This can be skipped, but is an easy way to elevate your mozzarella!
  • I accompanied my skewers with a bowl of pistachios for another crunchy element. Almonds would also be a great choice! 
  • The individual ingredients (meats, cheeses, veggies) can be sliced or folded and refrigerated in an airtight container for up to 24 hours beforehand.

🥡 Storing

Leftover skewers should be refrigerated in a Ziploc bag or airtight container and enjoyed within 2-3 days.

Ingredients
 

Veggies

  • 6 leaves green leaf lettuce (rinsed and dried)
  • 1 cup olives (black or green, pitted)
  • 4 oz marinated mushrooms (or artichoke hearts, or both)
  • 4 oz roasted red bell peppers

Meat

  • 12 slices salami (folded)
  • 12 slices pepperoni (folded)
  • 12 slices prosciutto (folded)

Cheese

  • 8 oz mozzarella pearls
  • 6 oz Swiss cheese (cubes)
  • 6 oz Colby jack cheese (cubes)

(Note: 2x or 3x only changes the ingredient list)

Instructions
