Chocolate billionaires are a tasty candy that features Rice Krispies and pecans that are coated with caramel and then dipped in chocolate! These bite-sized treats are crazy delicious and perfect for any occasion! It's hard to believe they are so good when they only use 6 ingredients!

Instructions
To begin, prepare 2 baking sheets by lining them with parchment paper (or wax paper that has been greased).
Add your caramels and water to a large saucepan and place it over low heat.
Cook, stirring occasionally until the caramels have melted and the mixture is smooth.
Gently stir in the Rice Krispies and chopped pecans until well combined.
Drop rounded teaspoons of the mixture onto the prepared baking sheets. Transfer the baking sheet to the refrigerator and allow them to chill for 10 minutes.
Meanwhile, in a microwave-safe bowl, combine your chocolate chips and shortening.
Microwave the chocolate for 30 seconds and then stir. Continue to heat the chocolate in 15-second increments, stirring in between each one, until melted and smooth.
Remove the chilled candy from the fridge and dip each ball into the melted chocolate, using a fork to flip the candy over, making sure to coat the candy entirely. Then, place the chocolate-coated balls back onto the baking sheet.
Place the baking sheets back into the refrigerator until the chocolate has set.
Notes
While a teaspoon may seem like a small amount, it is really all you need for each candy. Once you dunk them in the chocolate, they will get larger. You can use a small cookie scoop or melon baller for easy scooping!
If you want more Rice Krispies than pecans, you can swap the amount and use 1½ cups of Rice Krispies and 1 cup of pecans. Feel free to adjust the amounts to your liking, as long as they total 2½ cups between the two of them.
I recommend using a high-quality brand for your chocolate chips, like Ghirardelli!
To store: Keep your chocolate billionaires in an airtight container at room temperature for up to 5 days.
To freeze: These candies can be frozen in a freezer-safe bag for up to 1 month. Simply allow them to defrost before enjoying them.
