Green beans almondine is a French-inspired recipe that features tender-crisp green beans tossed with toasted almond slivers, butter, garlic, and seasoning. Instructions
Blanch The Green Beans
Place the 1 lb green beans into a microwave-safe casserole dish and add enough water to cover the bottom of the dish. Microwave the dish on high power for 6-7 minutes, or until the green beans are almost tender.
Drain the green beans in a colander and immediately rinse them with cold water in order to maintain the bright green color.
Toast & Saute Almonds
Heat a medium-sized skillet over medium heat and then add the ⅓ cup slivered almonds.
Cook the almonds until they begin to turn a golden-brown color, about 5 minutes. Make sure to keep an eye on them so they don't burn.
Remove the skillet from the heat and add in the 2 tablespoon butter, stirring it until melted. Add the optional diced 1 large shallot at this point if using.
Combine, Cook & Serve
Place the pan back onto the heat and add in the minced 2 teaspoon garlic, cooked green beans, ½ teaspoon each, salt & pepper.
Continue to stir the mixture until heated all the way through, about 3-5 minutes.
Remove from the heat and add the optional freshly grated lemon zest from 1 large lemon and 2 teaspoons of lemon juice to finish the dish. Serve immediately.
Notes
If you like your green beans tender-crisp, microwave them for less time (4-5 minutes), and add more time as needed.
Alternatively, you can blanch in boiling water for 5 minutes and then use a slotted spoon to transfer or 'plunge' the green beans into an ice bath.
I like the texture of the fine French green beans (haricot verts) found fresh and frozen at most grocery stores.
One finely diced shallot can be sauteed in the melted butter (before adding the garlic and seasoning).
Add lemon zest and 2 teaspoons of lemon juice to make the flavors 'pop'.
To store: Keep your green beans almondine in an airtight container in the fridge for up to 4 days.
To reheat: Reheat the green beans in a skillet over medium-low heat.
