Easy Green Beans Almondine
Green bean almondine is a classic, elegant vegetable side dish suitable for a weeknight dinner, Sunday roast, or holiday get-together. You'll be impressed by the flavor of fresh green beans paired with garlic butter and crunchy almond slivers in this recipe.
This is one of my go-to recipes for a light vegetable side dish to complement a hearty main protein. Everyone will be begging for the recipe!
🥘 Ingredients
- Green Beans - Fresh or frozen (and thawed) green beans are best. Canned, drained green beans can be used, simply skip the blanching step and start with toasting the almonds.
- Almonds - Slivered or sliced almonds (about 1 ½ ounces).
- Butter - The toasted almonds and green beans are combined in rich, melted butter or your favorite butter substitute.
- Garlic - Freshly minced, crushed, or grated garlic is best in this classic recipe.
- Seasoning - Season with salt and pepper to taste.
- Shallot (optional) - Adds depth of flavor with its mild onion taste.
- Lemon (optional) - Brightens up the garlicky butter sauce.

🔪 How To Make Green Beans Almondine
Green beans almondine are so easy to make, it only takes 20 minutes from start to finish. Grab a casserole dish, colander, spatula, and skillet to begin!
This recipe makes 4 servings. You may want to double or triple the recipe if you are making this for a holiday gathering!
Blanch The Green Beans
Microwave. Place the 1 pound (453.59 grams) of green beans into a microwave-safe casserole dish and add enough water to cover the bottom of the dish. Microwave on high power for 6-7 minutes, or until the green beans are almost tender.
Drain. Drain the green beans in a colander and immediately rinse them with cold water to maintain the bright green color.
Toast & Saute Almonds
Heat pan. Heat a medium-sized skillet over medium heat and add ⅓ cup (42.52 grams) of slivered or sliced almonds.
Cook almonds. Toast the almonds until they begin to turn a golden-brown color, about 5 minutes. Make sure to keep an eye on them so they don't burn.
Add butter. Remove the skillet from the heat and add the 2 tablespoons of butter, stirring until melted. Add the optional diced shallot at this point if using.
Combine, Cook & Serve
Add ingredients. Place the pan back onto the heat and add in the minced 2 teaspoons of garlic, cooked green beans, ½ teaspoon of salt, and ½ teaspoon of pepper.
Stir mixture. Continue to stir the mixture until heated all the way through, about 3-5 minutes.
Serve. Remove from the heat and add the optional freshly grated lemon zest from 1 large lemon and 2 teaspoons of lemon juice to finish the dish. Serve immediately.

- Crisp green beans. If you like your green beans tender-crisp, microwave them for less time (4-5 minutes), and add more time as needed.
- Blanched green beans. Alternatively, you can blanch in boiling water for 5 minutes and then use a slotted spoon to transfer or 'plunge' the green beans into an ice bath.
- Alternate green bean. I like the texture of the fine French green beans (haricot verts) found fresh and frozen at most grocery stores.
- Add shallot for flavor. One finely diced shallot can be sauteed in the melted butter (before adding the garlic and seasoning).
- Finish with lemon. Add lemon zest and 2 teaspoons of lemon juice to make the flavors 'pop'.

Keep your green beans almondine in a shallow airtight container in the fridge for up to 3-4 days. Freeze in an airtight freezer storage container for up to 3 months.
Reheat the green beans in a skillet over medium-low heat. Or, microwave single portions at medium power for 1 minute, stir, and continue heating in 30-second increments.

Almondine and amandine both mean the same thing, an almond garnish. Almondine is the spelling found in US and Canadian cookbooks. Amandine is a French culinary term.
You can either snap off the tips on both sides with your hands or line up the green beans on a cutting board and use a knife to chop off several at a time.
