Instructions
Preheat your oven to 350°F (175°C/Gas Mark 4) and butter a 9x13 baking dish.
Slice 2½ lbs yellow onions to be approximately ¼-inch thick slices then spread the onion rings in your prepared baking dish.
Season with 1 teaspoon garlic powder, ½ teaspoon oregano, ¼ teaspoon dry mustard powder, ¼ teaspoon each, salt & pepper, and optional 1 pinch cayenne pepper.
Place the sliced pats of 4 tablespoon butter over the seasoned onion rings in the dish, spreading them so that they’re evenly placed.
Layer the 1 cup cheddar cheese, 1 cup mozzarella cheese, and ½ cup Parmesan cheese in even layers over the onions. Push the cheese to the edges of the dish.
Bake at 350°F (175°C/Gas Mark 4) for 40-45 minutes or until the cheese is melted and bubbly, and the onions are tender. If desired, you can broil for a couple of minutes to brown the top of the onion casserole.
Remove from the oven and serve immediately.
Notes
Notes:
2½ pounds of onions is approximately 3 large onions or 4 medium-sized onions.
You can swap the butter for 1 cup of mayo over the sliced onions for a rich and tasty alternative. Chop the onions and serve this version as a hot dip for appetizers.
Separate the onion rings from each other (don't leave them nested) so that they cook evenly.
Serve with steak, burgers, meatloaf, or any hearty protein, over hot dogs or sausages.
Storing:
Allow your casserole to cool to room temperature and then store it in a sealed, airtight container in the refrigerator for up to 4 days.
Reheat your Tennessee onions by covering the dish with foil and baking in the oven at 350°F (175°C/Gas Mark 4) until heated through.
