Instructions
Heat a cast iron skillet (or any oven-safe, heavy-bottomed pan) over high heat with the beef tallow and preheat your oven to 400°F (205°C).
Use a few paper towels to pat dry your chuck steak and then season it liberally on all sides with the steak seasoning.
Place your steak into the cast iron skillet and sear it for 2-3 minutes on each side. Quickly sear the edges by lifting and turning the steak with kitchen tongs.
Open your preheated oven and place the skillet with the steak on the center rack and bake the steak for 10-15 minutes at 400°F (205°C). Use a digital meat thermometer to check the internal temperature of the steak to make sure it's cooked to your preference. *See notes
When your chuck steak is done cooking, move it to a plate to rest at room temperature and cover it with a loosely tented piece of aluminum for at least 5 minutes before you serve.
Notes
Let your chuck steak rest for about an hour prior to cooking if you can.
Season your steak as you are letting it rest or the night before as a 'dry brine' for the best flavor results.
To determine whether your steak is done, use a digital meat thermometer. You should take the meat out of the oven around 5°F before your preferred temperature because it will continue to warm up as it's resting- this is called "carryover cooking".
Rare: 115-120°F (46-49°C)
Medium-Rare: 120-125°F (49-52°C)
Medium: 130-135°F (54-57°C)
Medium-Well: 140-145°F (60-63°C)
Well: 150-155°F (66-68°C)
To store: Place any leftover steak in an airtight container or a sealable storage bag in your refrigerator and eat within 3 days.
To freeze: To freeze, wrap the leftovers in plastic wrap and store it in a freezer-safe container or heavy-duty plastic bag for up to 3 months. Thaw your frozen steak in the refrigerator overnight before reheating.
To reheat: Preheat your oven to 250°F (120°C) and cook your leftover steak until it is fully heated through to your liking. For extra tips and tricks, check out my reheating steak guide here!
