Instructions
Preheat your oven to 350°F (175°C) and lightly grease a 9x13 baking dish with non-stick cooking spray.
In a large mixing bowl, mix the sour cream, cream of chicken condensed soup, green onion, and Italian seasoning. *Do not mix any liquids with the condensed soup.
Add in the shredded or cubed cooked chicken and mix until well coated then transfer into your prepared baking dish.
In a small mixing bowl combine the crushed Ritz crackers with the melted butter, using a fork to combine until evenly coated. Sprinkle the mixture over the chicken casserole in your baking dish to make an even layer.
Bake in the center of your oven's middle rack at 350°F (175°C) for 25-30 minutes or until golden brown on the top. Remove from the oven and serve immediately.
Notes
In place of the Italian seasoning (or Herbes de Provence), you could also use ¼ each of salt, pepper, garlic powder, and onion powder.
64 Ritz crackers are the equivalent of 2 full sleeves of Ritz crackers.
½ cup of butter is equal to 1 stick of butter.
To store: Store your leftover Ritz chicken casserole in an airtight container in the refrigerator for up to 3 days.
To freeze: If you want to make this casserole ahead of time, make and assemble as above and store it in a freezer-safe container prior to baking. You could also freeze your leftovers after baking too! For both options, this chicken casserole will keep up to 3-4 months.
To reheat: Preheat your oven to 350°F (175°C) and place your leftovers in a baking dish. Cover the dish loosely with aluminum foil and bake for 20-30 minutes or until heated through.
