The cauliflower florets are crisp on the outside, tender on the inside, and coated in a spicy buffalo sauce! With just a handful of simple ingredients, you'll be ready to enjoy this tasty dish in no time!

Easy Roasted Buffalo Cauliflower

Roasted buffalo cauliflower is a vegetarian dish that has gained immense popularity in recent years. It's a healthier alternative to the classic buffalo wings, and it's perfect for those who love bold and spicy flavors but prefer to avoid meat!

Roasting the cauliflower makes it tender on the inside but still gives it a slightly crispy exterior. I can't help but pop them in my mouth a few at a time, they are hard to set down!

🥘 Roasted Buffalo Cauliflower Ingredients

You only need 5 ingredients to make buffalo cauliflower! You could even grab a bag of pre-washed and trimmed cauliflower florets at the grocery store to save some time.

  • Buffalo Sauce - ⅓ cup of buffalo sauce (see my recipe or use store-bought).
  • Olive Oil - 2 tablespoons of extra virgin olive oil.
  • Butter - 1 tablespoon of butter or a butter substitute.
  • Cauliflower - 1 head of cauliflower broken into small florets or 1 bag of pre-trimmed florets. This isn't a great recipe for frozen cauliflower because it won't crisp up as nicely.
  • Parmesan Cheese - ¼ cup of grated Parmesan cheese. Freshly grated is best!

🔪 How To Make Roasted Buffalo Cauliflower

Just make your sauce, toss the cauliflower, and bake- it's that easy! Get out your measuring utensils, a microwave-safe bowl, and a baking sheet to get started.

This makes about 4 servings, but you can easily double up on the cauliflower and sauce to make more. Just be sure not to crowd the baking sheet or they won't crisp up!

  1. Prep. Preheat your oven to 425°F (215°C) and line a rimmed baking sheet with aluminum foil for easy cleanup.
  2. Combine. In a large, microwave-safe bowl, add the ⅓ cup buffalo sauce, 2 tablespoons olive oil, and 1 tablespoon butter. Heat the bowl in the microwave in small increments until the butter has melted. Then, stir until everything is smooth and combined.
  3. Toss. Place the cauliflower florets from 1 medium to large head of cauliflower into the bowl with the sauce and toss until they are well coated. Spread them out into an even layer on the prepared baking sheet.
  4. Roast. Cook in your preheated oven at 425°F (215°C) for 25-30 minutes, tossing the cauliflower halfway through. Sprinkle the ¼ cup grated Parmesan cheese on top of the cauliflower, then bake for another 10 minutes or until slightly toasted.
  5. Serve. Remove the roasted cauliflower from the oven and serve immediately.

You can pair anything you would eat with chicken wings with this zesty buffalo cauliflower. Blue cheese or ranch dressing are my personal favorites, with some sliced carrots and celery on the side! Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • Swap out the grated Parmesan cheese with some blue cheese crumbles for a flavorful twist!
  • You can also make this buffalo cauliflower in your air fryer, cooking for about 10-15 minutes at 400°F (200°C). Shake the basket halfway through the cooking time. 
  • To add extra crispiness, broil the cauliflower for the last 2 minutes.

Roasted buffalo cauliflower is best when enjoyed fresh. However, it can be stored in an airtight container in the fridge for a few days and re-crisped in the oven or air fryer.

Roasted buffalo cauliflower can be served as an appetizer, side dish, or even as a main course. It pairs well with a variety of dipping sauces like ranch or blue cheese dressing. I like to serve my cauliflower with celery and carrot sticks as they do with chicken wings.

Is This Roasted Buffalo Cauliflower Vegan?

This recipe isn't vegan, but there are a few easy swaps you can make that will make it vegan-friendly! Instead of butter, use your preferred brand of vegan butter. Also, make sure you use vegan buffalo sauce. You can leave off the cheese altogether or use vegan Parmesan!

Is Roasted Buffalo Cauliflower Spicy?

The level of spiciness depends on the type of buffalo sauce you use. If you prefer a milder version, you can use a mild buffalo sauce. You can make it hotter by adding a few dashes of your favorite hot sauce to the mix!
