It only takes 10 minutes and a few ingredients to make your slaw, with no cooking needed! You can use pre-shredded veggies to make prep time even simpler!
- Broccoli Slaw - 12 ounces of broccoli slaw (or grated broccoli stems).
- Carrots - 1 cup shredded carrots.
- Broccolini - 1 bunch of broccolini (roughly chopped).
- Greek Yogurt - 1 cup Greek Yogurt (or mayonnaise).
- Dijon - 1 tablespoon of Dijon mustard (or a Dijon mustard alternative).
- Salad Oil - 1 teaspoon extra virgin olive oil (EVOO) or your preferred oil.
- Vinegar - 2 tablespoons of apple cider vinegar (or an apple cider vinegar substitute).
- Seasoning - ¼ teaspoon each, salt & pepper (to taste).

🔪 How To Make Broccolini Slaw
This effortless broccolini slaw is quick to make and ready in only 3 steps! You will need a large mixing bowl, plastic wrap, and a box shredder to prep your veggies.
This side dish makes about 6 servings. If you plan on using the slaw as a topping for tacos or wraps, you can spread it further!
- Prep veggies. Chop and shred 12 ounces of broccoli slaw, 1 cup of carrots, and 1 bunch of broccolini. Next, place the grated vegetables into a large mixing bowl.
- Make Sauce. In the large mixing bowl with veggies, add 1 cup of Greek Yogurt, 1 tablespoon of Dijon mustard, 1 tablespoon of olive oil, 2 tablespoons of apple cider vinegar, and ¼ teaspoon each of salt & pepper.
- Chill and Serve. Mix until all of the ingredients are thoroughly combined. Then, cover with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld before serving.

Ha! Yes, I added my fave pepitas and dried cranberries. They're opitonal but very tasty!
