Instructions
In a large mixing bowl, mix together the ground beef, chives, blue cheese crumbles, and Worcestershire sauce.
Preheat your grill, frying pan, or skillet to the upper end of medium-high heat (about 425°F / 218°C on the grill).
Stovetop: Add a tablespoon of extra virgin olive oil to the pan while it heats.Grill: Clean and oil the grates.
Meanwhile, form your meat mixture into three ½-pound patties (or six ¼-pound patties).
Once hot, generously season the tops of the patties with burger seasoning and then immediately place them into the pan (or onto the grill) with the seasoned side facing down.
Cook for about 4 minutes and then season the second side. Flip the patties and cook for an additional 3-4 minutes, or until they reach your desired level of doneness.
Once cooked, remove the burger patties from the heat and allow them to rest for 5 minutes.
Assemble your burgers by placing the bottom bun, the patties, some more blue cheese, bacon, and red onion slices followed by the top bun.
Notes
Using beef that is too lean will make dry burgers. Opt for a ratio of 85/15 or 80/20 for some juicy patties.
You can prepare your burger patties up to one day in advance. Just wrap them tightly with plastic wrap and keep them in the fridge!
Ground beef has a recommended internal temperature of 160°F (71°C) in order to be considered safe. Using a meat thermometer is the best way to check if your burger is done.
To store: Keep leftover patties in an airtight bag or container in the refrigerator for up to 4 days. I recommend only storing the patties, and assembling the burgers once ready to serve.
To reheat: The best way to reheat your burger is in the oven. Place your patties on a metal wire rack over a baking sheet lined with foil and bake it at 400°F (205°C) for 3 minutes, flip it, and then cook the second side for an additional two minutes.
