Instructions
Preheat your oven to 400°F (205°C) and line a rimmed baking sheet with parchment paper (*see notes).
Drizzle the olive oil over the chicken, rubbing it in on all sides., then sprinkle the chicken seasoning on each drumstick. Turn the drumsticks to get all sides seasoned.
Place a slice of bacon at the bone end of your drumstick and roll it up so that the bacon wraps around the drumstick. Overlay two slices if needed to get the entire chicken leg fully wrapped with bacon.
Place your bacon-wrapped drumsticks in the prepared baking dish and cook for 35 minutes on the middle rack at 400°F (205°C). After 35 minutes, set your broiler to high and broil for 3-4 minutes to crisp the bacon.
Your drumsticks are ready once the internal temperature reaches 165°F (74°C). Remove from the oven and serve immediately.
Notes
Use a roasting rack for more even cooking! If desired, you can place a roasting rack on your parchment paper or aluminum foil-lined baking sheet for more evenly cooked chicken legs. Make sure to spray your roasting rack with non-stick cooking spray or brush with oil before using.
Have larger chicken drumsticks? If your chicken legs are larger in size, you can use 2 slices of bacon per drumstick to make sure they’re completely covered in the bacon!
Be sure to watch the chicken closely while it broils! The broiler can burn food super easily and no one wants a burnt chicken leg! Especially if you decide to brush the chicken with a sauce, keep a careful eye on the drumsticks when broiling.
Don’t skip coating the drumsticks with oil! Coating the drumsticks with extra virgin olive oil helps the seasoning to stick to the chicken and gets them nice and browned while they bake
