3cupsquick oatmeal(use quick oats, not old fashioned or steel cut oats)

Instructions
Combine the ½ cup butter, 2 cups sugar, and ½ cup milk in a saucepan and bring to a boil over medium-high to high heat (enough to bring the syrup to a rapid boil). Stir frequently to prevent burning or boiling over!
Once the syrup is at a full rolling boil, stir and cook for 1 minute then remove from heat.
Add the 2-3 teaspoon vanilla extract and 4 tablespoon unsweetened cocoa powder, and stir until the syrup is smooth. Add the 3 cups quick oatmeal and stir until evenly coated with the syrup.
Drop tablespoon-sized portions onto waxed paper, and use the back of a spoon to make cookie-shaped if desired. Allow to set up for one hour.
Notes
Add a pinch of salt if using unsalted butter.
Store chocolate oatmeal no-bake cookies in an air-tight container at room temperature, for up to two weeks.
