Instructions
In a cast iron skillet (or heavy-bottomed skillet), add your extra virgin 2 tablespoon olive oil and place it over medium-high heat.
Generously season the 3 lb pork ribeye roast with 1 tablespoon each, salt & pepper, making sure to season both sides of the meat. Then place the pork into the hot pan and sear each side until golden brown, about 2-3 minutes per side.
Place the sliced1 large apple, 1 large yellow onion, and minced 2 teaspoon garlic into the bottom of your slow cooker. Set the pork roast on top of the fruit and vegetables and season with 1 tablespoon pork roast seasoning.
Place the lid onto the crockpot and cook on high for 2-3 hours or low for 6 hours.
Slice and serve with a side of vegetables.
Notes
I love the flavors in my pork roast seasoning and highly recommend trying it out! However, you can also use your favorite blend.
The actual cook time will vary based on the weight of your pork ribeye roast.
Use the drippings from your slow cooker to make some savory and rich pork gravy to serve over top of your roast!
To store: Keep any leftovers stored in an airtight container in the refrigerator for up to 4 days.
To freeze: Placed into an airtight, freezer-safe container this pork can be frozen for up to 6 months.
To reheat: You can reheat single servings of pork in the microwave. To reheat larger amounts, place the roast in a baking dish and cover it with aluminum foil. Bake in the oven at 350°F (175°C) until the internal temperature reaches 165°F (74°C). This could take 20-30 minutes. Then, allow the pork to rest for 15 minutes before serving.
