Weight Watchers 7Up Cake

This 3 ingredient Weight Watchers 7Up cake is a super simple lemon cake mix recipe that is worth only 2 Weight Watchers points per slice. Frost your lemon cake with a layer of fluffy Cool Whip before topping it with some fresh fruit or lemon zest and you will be in heaven. This is one dessert you can enjoy guilt-free!

If dessert is your weakness like it is mine, I have finally found an easy cake mix recipe that doesn't taste like you're saving calories. It's light and fluffy due to the carbonation in the soda while the boxed cake mix brings the classic bright flavor you want in a lemon dessert.

You don't need to be on Weight Watchers to enjoy this lemon 7Up cake, but if you are, a slice will only cost you 2 WW points! With only 3 ingredients, this it's almost too good to be true.

🥘 Ingredients

You only need 3 simple ingredients for this cake. Just be sure to get diet 7Up and lite or fat-free Cool Whip for the WW points to add up correctly.

  • Lemon Cake Mix - 15 ounces of any brand of lemon cake mix (I used Duncan Hines).
  • Diet 7Up - 20 ounces.
  • Cool Whip - 8 ounces of lite or fat-free Cool Whip.

🔪 How To Make Lemon 7Up Cake

This recipe is definitely beginner-friendly. All you need is a mixing bowl, silicone spatula, and a 9x13 baking pan.

When sliced into 24 slices, each slice is a serving worth 2 weight watchers points.

Step 1: Preheat. Preheat your oven to 350°F (175°C) and spray a 9x13 baking pan with non-stick cooking spray.

Step 2: Mix. Empty a 15-ounce box of cake mix into a large mixing bowl. Pour in 20 ounces of Diet 7Up and mix gently until thoroughly combined. *Do NOT follow the instructions on the back of the box of cake mix.

Step 3: Bake. Pour the cake batter into your baking pan. Place your cake on the middle of the center rack in your oven and bake for 30-35 minutes.

Step 4: Cool. Remove your cake from the oven and set it aside to cool completely. Once cooled, top it with 8 ounces of Cool Whip. Spread it into an even layer across the top of the cake like frosting.

Step 5: Slice and serve. Slice your cake into 24 even slices. Top with zested lemon, fresh fruit, or bits of crumbled cake if desired, and serve.

Don't Forget The Toppings

Strawberries, raspberries, pineapple, or mandarin oranges would all be incredible on top of this fluffy, lemon cake. Even without any toppings, it is pretty darn good. Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • Don't over-mix the cake mix and soda. The carbonation helps the cake bake up nice and fluffy. You don't want to pop all the bubbles and lose that carbonation!
  • Let your cake fully cool! Cool Whip is thinner than frosting, so it will literally liquefy if you put it on a warm cake.
  • Storing: Keep your cake covered in the refrigerator and enjoy within 3-4 days. Whipped cream, dairy or not, should not be kept at room temperature for more than 2 hours.

Can I Make Lemon 7Up Cupcakes Instead?

Yes! To make cupcakes, you will want to reduce the amount of 7Up from 20 ounces to 12 ounces (one can).

This should make about 20 cupcakes, they will be a touch more dense than the cake version, but it will help them keep together! Line a muffin tin with cupcake liners and bake at 350°F (175°C) for 15 minutes or until the cupcakes are springy to the touch.

Can I Use Different Soda To Make 7Up Cake?

Regardless of the flavor of cake mix or soda used, the concept remains the same! If using 7Up (or Sprite, or Sierra Mist), yellow or white cake mix would match the lemon-lime flavor (especially if you add a few teaspoons of lemon, lime, or orange zest).

Some other fun combinations would be:

  • Spiced Cake Mix and Diet Ginger Ale
  • Chocolate Cake Mix and Diet Dr. Pepper
  • Cherry Chip Cake Mix and Diet Cherry 7Up
