Easy Slow Cooker Pork Loin Recipe
I do a lot of cooking and definitely spend my fair share of time in the kitchen. However, I do have days where I'm extra busy or just don't feel like standing at the stovetop and cooking a full meal.
It's days like this when I always reach for my slow cooker recipes like this yummy pork loin. I get it prepped and ready to go either in the morning (or even the afternoon) and then it's ready to go for dinner!

🥘 Slow Cooker Pork Loin Ingredients
This dish is a full meal, all in one pot! You'll only need your pork loin, some veggies, and some seasoning!
- Olive Oil - 2 tablespoons of extra virgin olive oil (EVOO).
- Pork Loin - A 3-4 pound pork loin.
- Pork Roast Seasoning - 1 tablespoon of pork roast seasoning. I recommend trying out my recipe, but you can also use your own!
- Potatoes - 2 medium russet potatoes, cubed (or about 2-3 cups of cubed potatoes).
- Onion - 1 large yellow onion or white onion, peeled and sliced.
- Celery - 1 cup of sliced celery.
- Carrots - 1 cup of sliced carrots.
- Garlic - 2 teaspoons of minced garlic (2 cloves).

🔪 How To Make Slow-Cooker Pork Loin
The beauty of slow cooker recipes is that they are almost completely hands-off (but I do recommend searing the meat first!) You'll need your slow cooker, a cutting board, and a knife.
A 3-4 pound pork loin is enough for 4-6 servings, depending on how hungry everyone is!
- Heat the oil. Add 2 tablespoons of extra virgin olive oil to a cast iron skillet (or a similar heavy-bottomed skillet) and put it over medium-high heat.
- Sear. Season all sides of a 3-4 pound pork loin with salt and pepper and then place it into the hot skillet. Sear both sides for 2-3 minutes each, or until golden brown.
- Add to the slow cooker. Place 2 medium cubed potatoes, 1 large sliced onion, 1 cup of carrots, and 1 cup of celery along with 2 teaspoons of minced garlic into your slow cooker. Set the seared pork loin on top of the veggies and season with pork roast seasoning.
- Cook. Place the lid back on the slow cooker and cook on low heat for 6 hours or high heat for 2-3 hours.
- Serve. Slice the pork and serve with a side of cooked vegetables.
This dish has veggies included, but you could still whip up some tasty sides! Try it with some cathead biscuits or butter herb Rhodes rolls! Enjoy!

- Don't toss out the drippings! Instead, you can make a delectable pork gravy to pour over top of the meat!

Keep any leftovers stored in an airtight container in the refrigerator for up to 4 days.
This pork loin can be frozen for up to 6 months. Just place it into an airtight, freezer-safe container.
Reheating Pork Loin
You can reheat your pork loin in either the microwave or oven. Place the pork into a baking dish and cover it tightly with foil. Then, bake in the oven at 350°F (175°C) until the internal temperature reaches 165°F (74°C).
Remove from the oven and let the meat rest for 10 minutes.

❓ Recipe FAQs
The pork itself will create a lot of liquid during the cooking process. Since it is sitting on top of the veggies, you won't have an issue with the meat sticking to the bottom of the slow cooker. No liquid is needed!
You don't have to, but I strongly recommend it! Browning the meat adds a ton of flavor to the dish and only takes a few minutes. However, if you are in a pinch, you can skip it.
If you've noticed that your meat is tough, it simply isn't done cooking! It needs more time in the slow cooker for the collagen to break down and become amazingly tender!
