These roasted potatoes are an effortless side dish that is flavored using some dry onion soup mix. You can pick up some premade soup mix at the store or make an extra tasty homemade mix!
I love roasting potatoes for an easy side dish that pairs well with everything. Of course, tossing them with some onion soup mix adds an extra special flavor.
🥘 Ingredients
I strongly recommend trying out my homemade soup mix recipe for some extra flavorful potatoes. However, the store-bought packets work just as well.
- Potatoes - 1 pound of russet potatoes. This is about 3 medium-sized potatoes (*see note).
- Oil - 2 tablespoons of extra virgin olive oil (EVOO).
- Dry Onion Soup Mix - 1 ounce of dry onion soup mix. You can try out my recipe or use the store-bought packets. The packets are 1.9 ounces, so you'll use about half of one (*see note).
- Salt & Pepper - ½ teaspoon of both salt and pepper.
- Garlic Powder (optional) - ½ teaspoon of garlic powder.

🔪 How To Make Onion Soup Mix Roasted Potatoes
This recipe is super easy, just make sure you grab a baking sheet and a knife to chop your potatoes.
This recipe will yield 4 servings.
- Preheat. To get started, line a baking sheet with some parchment paper and preheat your oven to 450°F (230°C).
- Gently toss the potatoes. Toss the 1 pound of potatoes, 2 tablespoons of extra virgin olive oil, 1 ounce of dry onion soup mix, ½ teaspoon each of salt and pepper, plus optional ½ teaspoon of garlic powder if desired. You can do this in a medium-sized mixing bowl, a large plastic food storage bag, or directly on your baking sheet. As long as the soup mix ends up evenly distributed, any method will work wonderfully.
- Roast. Bake the onion soup mix seasoned potatoes in your preheated oven at 450°F (230°C) for 35-40 minutes. Use a wooden spoon or spatula to stir them every 15 minutes to ensure they cook evenly.
- Serve. Remove from the oven and serve when your potatoes are fork-tender and golden crispy on the edges. Serve immediately.
Serve with any of your favorite entree, such as a smoked leg of lamb or a grilled ribeye.

- You can peel your potatoes if you like. I chose to leave the peel on mine, but it is completely up to you.
- Use a potato variety that is high in starch so it will hold up well to the heat of the oven, like Russet potatoes or Yukon Gold.
- I recommend either Lipton brand dry onion soup mix, or you can make your own at home with my homemade onion soup mix.
- The ingredients and instructions are for using a half packet of dry onion soup mix. Using a whole packet may be overwhelming, or not, depending on your personal tastes. Adjust to your liking.

Store any leftovers in a storage container in the fridge for up to 5 days.
To reheat, for single portions, use small bursts in the microwave to reheat. Additionally, you can pop them back into the oven until heated.

The exact ingredients in a dry onion soup mix can vary based on the brand. For a store-bought option, I enjoy using Lipton's. However, a homemade mix is my favorite because I can control exactly what is going into it!
Typically, a dry onion soup mix will consist of dry onion flakes, onion powder, beef bullion, pepper, and paprika.
Extra virgin olive oil is my favorite oil for practically any cooking needs! The term 'extra virgin' simply means that it is of the highest quality.
Make sure to use high-starch potatoes so that they can handle the heat of the oven without falling apart. Russets are my favorite, but Maris Piper and King Edwards are also great options!

Hi Pamela, since canned potatoes are slightly tender I would reduce the baking time. Pat them dry as best you can and watch them closely, starting 15 minutes earlier than the suggested cooking time. Thanks for asking!
