Maple Roasted Brussel Sprouts with Bacon and Toasted Walnuts are a sweet and salty vegetable side dish for the holidays

These easy to make Maple Roasted Brussel Sprouts with Bacon and Toasted Walnuts are a wonderful addition to your holiday meals! Not only does the roasting bring out the sweetness of the brussel sprouts, but it also adds some crispy caramelized edges that are a true treat!

I thoroughly enjoy the flavor of these Maple Roasted Brussel Sprouts with Bacon and Toasted Walnuts, but they are one of my make ahead dishes when preparing for holiday meals. Simply follow the initial instructions, but after 3o minutes of roasting allow the brussel sprouts to cool and refrigerate until ready to finish roasting (with the maple syrup, bacon and toasted walnuts).

While I absolutely love dishing up these roasted brussel sprouts with beef dinners like my prime rib roast, they are great vegetable side dish with for so very many meals!

How To Make Maple Roasted Brussel Sprouts with Bacon and Toasted Walnuts

  1. Preheat oven to 375 ºF (190 ºC) and wash, trim and cut any larger brussel sprouts into halves. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cleaned brussel sprouts with olive oil, salt, and pepper until well coated. Transfer to baking sheet and spread evenly.
  3. Roast brussel sprouts at 375 ºF (190 ºC) for 15 minutes, toss and continue to roast for an additional 15 minutes. While the brussel sprouts are roasting, toast crushed walnuts in a small, dry frying pan over medium high heat. Keep the walnuts moving until slightly browned and toasted smelling, about 4-5 minutes. *Watch closely as the walnuts can burn easily!
  4. For the final 15 minutes of roasting time, drizzle the maple syrup and sprinkle walnuts and cut cooked bacon over the brussel sprouts and mix to coat evenly. Then return to the oven and finish roasting. *The walnuts can be tossed with the brussel sprouts after roasting is completed, but will take on a slightly tender texture if cooked with the maple syrup, bacon, and brussel sprouts.

Ingredients
 

  • 2 lbs brussel sprouts (washed, trimmed, and cut into halves)
  • ¼ cup olive oil (extra virgin)
  • salt & pepper (to taste)
  • ¼ cup maple syrup
  • 4 strips bacon (cooked and cut into pieces)
  • ½ cup crushed walnuts

(Note: 2x or 3x only changes the ingredient list)

Keep the walnuts moving until slightly browned and toasted smelling, about 4-5 minutes. *Watch closely as the walnuts can burn easily!
  • For the final 15 minutes of roasting time, drizzle the maple syrup and sprinkle walnuts and cut cooked bacon over the brussel sprouts and mix to coat evenly.
