Chocolate Raisin Cornflake Clusters

These chocolate raisin cornflake clusters are a quick and easy chocolate snack packed with cornflake cereal and sweet raisins. With no oven required, this simple no-bake treat couldn't be any easier. Trust me when I say these tasty chocolate-covered bites won't last long!

While I consider myself a dessert fanatic, sometimes I want something sweet without spending much time in the kitchen. That's why no-bake desserts have quickly become some of my favorite recipes.

From no-bake cookies to pumpkin cheesecake and tons of different kinds of candy, I have spent my fair share of time perfecting the art of no-bake treats. These clusters combine sweet chocolate with crunchy cereal and chewy raisins for a perfect combination that even a beginner can make.

🥘 Ingredients

  • Cornflakes - Cornflake cereal can be used, but I prefer Frosted Flakes.
  • Raisins - You can use regular raisins, sultanas (golden raisins), craisins, or dried cherries are all delicious fruits that can be used.
  • Chocolate - Some milk chocolate chips, melts, or almond bark for melting.

🔪 How To Make Chocolate Raisin Cornflake Clusters

All you need to do for these is mix your cereal and raisins, coat them in chocolate, and let them harden. You will need a baking sheet, some parchment paper, a mixing bowl, and a microwave-safe bowl.

This recipe will make about 25 clusters, depending on how large you scoop them.

Step 1: Prepare. Line your baking sheet(s) with parchment paper or a nonstick silicone mat.

Prepare The Mixture

Step 2: Crush the cereal (optional). Add 1 cup (28 grams) of cornflakes to a bowl. You can add them to the clusters as-is, which is my preference, or use the back of a wooden spoon to crush them gently. Avoid crushing them too much; you don't want crumbs, just large chunks.

Step 4: Melt the chocolate. Heat 1 cup (175 grams) of milk chocolate melts in a microwave-safe bowl for 30 seconds. Remove the bowl from the microwave and stir. Continue heating the chocolate in short, 15-second bursts, stirring after each heating until melted.

Step 3: Add the dry ingredients. Pour the cornflakes and ½ cup (72.5 grams) raisins into the bowl with the melted chocolate and stir gently to combine.

Portion, Set & Serve

Step 5: Scoop. Scoop teaspoonfuls of the mixture onto the prepared baking sheet(s).

Step 6: Chill. Transfer the tray to the refrigerator and allow the bites to chill for 30 minutes or until the chocolate has completely set.

💭 Angela's Pro Tips & Recipe Notes

  • Only slightly crush the cereal. Don't crush your Cornflakes too much. The goal is to have nice, crisp pieces in each bite instead of crumbs. I skip this step.
  • Don't burn the chocolate. Microwave your chocolate in short bursts to prevent it from burning.
  • Mix it up. You can always swap out the raisins for craisins, sultanas, or dried cherries. Try some chopped dates, prunes, or apricots. I enjoy a variety of dried fruits in this candy, and I'm sure you will, too!
  • Store them for later. Keep these bites stored in an airtight container at room temperature for up to 5 days.

Ingredients
 

  • 1 cup Cornflakes
  • ½ cup raisins
  • 1 cup milk chocolate melts
