Did you know that Canadian lobsters and Maine lobsters are actually the same species, Homarus americanus? That is why there are so many similarities between the two lobsters and why people often don't know the differences.
These lobsters are found along the Atlantic coast of North America, from Newfoundland and Labrador in Canada to North Carolina in the United States. Both areas are widely known for their lobster fishing industries.

The size of lobsters can differ depending on where they are found and the rules that are followed. In Canada, they may permit catching larger lobsters, but in Maine, there are specific minimum and maximum size rules to protect the lobster population.
Canadian lobsters have a hard and spiny shell that ranges in color from greenish-brown to reddish-brown. They have an average weight ranging from about 1 to 4 pounds.
Canadian lobsters typically have larger claws and a harder shell compared to Maine lobsters. This makes it more challenging to handle and prepare them.
Maine lobsters, on the other hand, have a smoother and slightly softer shell that ranges in color from greenish-brown to dark brown. They are smaller than Canadian lobsters, with the average weight ranging from around 1 to 2 pounds.

Taste and Texture
Although they belong to the same species, some people argue that the taste and texture of lobsters can vary slightly depending on the water they inhabit and the food they consume. However, this difference is mostly a matter of personal preference rather than an objective distinction.
The main factor causing this is water temperature. Along the coast of Maine, the temperature is higher than the waters of the Canadian coast.
Since the temperature is higher in Maine, Maine lobsters have meat with a delicate, sweet flavor and a soft texture. It's more tender than Canadian lobsters and is considered to be more succulent.
Canadian lobsters are known for their larger size and higher fat content. Their taste is slightly inferior to the taste of Maine lobsters. However, they are still considered one of the best lobsters to buy.
Because the temperature of the water along the Canadian coast is a lot cooler, the texture of Canadian lobster meat is more firm and dense.
Cooking Methods
The cooking methods for Canadian and Maine lobsters also differ. Canadian lobsters are typically boiled and served with melted butter, while Maine lobsters are often steamed and served with clarified butter.
The boiling method of cooking Canadian lobsters is believed to help result in tender meat. In contrast, the steaming method of cooking Maine lobsters is believed to preserve the natural flavors of the lobster meat.
Availability
Another difference between Canadian and Maine lobsters is their availability and how long they can survive out of water.
Canadian lobsters are primarily caught in the cold waters of the North Atlantic, specifically the Canadian waters. They can survive up to 72 hours out of water which results in easier distribution and higher demand.
Canadian lobster suppliers have an advantage by being able to transport fresh lobster to consumers through a longer window of time. For this reason, most lobsters that you see at the grocery store come from Canada and have a lower price than Maine lobster.
Maine lobsters are primarily caught along the coast of Maine. They also are found in the shallow, rocky waters along the Atlantic coast of the United States.
The survival window for Maine lobsters out of water is 48 hours. They are transported overnight to maintain the freshness and quality of flavor.
Sustainability Practices
Both Canadian and Maine lobster industries have strict rules to protect the lobsters and maintain sustainability. However, the regulations and practices might differ between the two areas.
For instance, they have limits on when fishing is allowed, the size of lobsters that can be caught, and restrictions on catching female lobsters bearing eggs.

Canadian Lobster vs Maine Lobster: Lobster Salad (+More Useful Information!)
Ingredients
- 1 ½ lbs lobster meat (cooked and chopped into ¾-inch pieces)
- â…“ cup mayonnaise (good quality mayo like Duke's, Hellman's, or Best Foods)
- 1 tablespoon lemon juice (freshly squeezed is best)
- ¼ cup celery (finely chopped, use the tender inner ribs of celery or celery hearts)
- 1 tablespoon chives (finely chopped)
- ¼ teaspoon each, salt & pepper (to taste)
- 1 splash hot sauce (optional)
Instructions
- Add 1 ½ lbs lobster meat, ⅓ cup mayonnaise, 1 tablespoon lemon juice, ¼ cup celery, 1 tablespoon chives, ¼ teaspoon each, salt & pepper (to taste), and the optional 1 splash hot sauce to a mixing bowl.
- Gently stir until all of the ingredients are combined.
- You can serve your lobster salad right away, but ideally, you want to chill it for at least 30 minutes (up to 4 hours). Garnish with extra chives if desired.
Notes
- 1 ½ pounds of lobster meat is roughly 3 ½ cups.
- For the best-tasting lobster salad, use fresh, high-quality ingredients. If possible, try to use fresh lobster meat, lemon juice, and a good brand of mayo like Duke's, Hellman's, or Best Foods.
- To ensure tender and succulent lobster meat, cook a whole lobster in a large pot of boiling water for about 7-9 minutes (for a 1-pound lobster). Adjust the cooking time accordingly for larger lobsters. Be careful not to overcook the lobster, or you will end up with tough, rubbery meat!
- Let freshly cooked lobster cool before making lobster salad. This makes it easier to handle, and the salad tastes best cold anyways!
- Adjust the seasonings to suit your tastes. You can use more or less salt & pepper, and I find a splash of hot sauce (or sprinkle of paprika) adds a lovely little kick. Dill also makes a great addition either mixed into the salad or added as garnish!
- Lobster salad tastes best when served chilled. After preparing the salad, cover and refrigerate it for at least 30 minutes to allow the flavors to meld together. This also helps the salad hold its shape when served.
- You can also try using different types of seafood in this salad, such as shrimp, crab, or scallops, for a variation on the traditional lobster salad!
- To store: Lobster salad should always be kept in an airtight container in the fridge and is best enjoyed within 2 days. I don't recommend freezing it because the mayonnaise will separate.
