🔪 How To Make Birthday Cake Funfetti Cupcakes
These cupcakes are incredibly simple to prepare, and everything is combined in just one bowl! All you need is your mixing bowl, a whisk, a silicone spatula, a muffin pan, and your measuring utensils.
This recipe will make 24 standard-sized cupcakes or 72 mini cupcakes.
- Preheat. Preheat your oven to 350°F (175°C) and place your cupcake liners into a standard-sized cupcake pan.
- Combine dry ingredients. Add all of the dry ingredients (2¾ cups (344 grams) of cake flour, 1½ cups (300 grams) of sugar, 4 teaspoons (16 grams) of baking powder, and ½ teaspoon (3 grams) of salt) to a large mixing bowl then whisk together.
- Prepare. Make a well in the center of the mixed dry ingredients to add the wet ingredients.
- Wet ingredients. Add all of the wet ingredients (2 large eggs (100 grams), 2 large egg whites (66 grams), ⅔ cup (158 milliliters) of milk, ½ cup (115 grams) of sour cream, ½ cup (114 grams) of butter, and 1 tablespoon (15 milliliters) of vanilla extract). Mix until just combined, and then gently fold in the ½ cup (80 grams) of rainbow funfetti sprinkles.
- Pour. Portion the batter into your prepared muffin pan, filling each cavity only ⅔ of the way full.
- Bake. Bake in the preheated oven at 350°F (175°C) for 15-18 minutes, or until a toothpick can be inserted and removed into the cupcakes with no batter on it.
- Cool. Remove the cupcakes from the oven and let cool for a few minutes before removing them from the pan. They need to cool completely before frosting them.

💭 Tips & Notes
- If you don't have any cake flour on hand, you can easily make your own or check out these cake flour substitutes.
- Choose some fun and colorful cupcake liners to make them look extra festive!
- You'll only want to fill your cupcake pan about ⅔ of the way full so that the cupcakes can rise without overflowing from the pan.
- Let your cupcakes cool completely before you frost them. If they are even the slightest bit warm, the frosting could melt and become runny.
- You can use any of your favorite buttercream frosting flavors for these cupcakes! However, I recommend using this homemade Funfetti buttercream frosting for a fun and traditional look.
🥡 Storing
Your funfetti cupcakes (without any frosting) can be stored in a sealed container at room temperature for up to 1 week. Once frosted, the cupcakes will only last 2-4 days. If using dairy-based frosting (such as buttercream), keep them stored in the refrigerator.
