Make a well in the center of the mixed dry ingredients to add the wet ingredients into.
Add all of the wet ingredients (2 large eggs, 2 large egg whites, ⅔ cup milk, ½ cup sour cream, ½ cup butter, and 1 tablespoon vanilla extract). Mix until just combined, and then gently fold in the ½ cup rainbow funfetti sprinkles.
2 large eggs, 2 large egg whites, ⅔ cup milk, ½ cup sour cream, ½ cup butter, 1 tablespoon vanilla extract, ½ cup rainbow funfetti sprinkles
Portion the batter into your prepared muffin pan, filling each cavity only ⅔ of the way full.
Bake in the preheated oven at 350°F (175°C) for 15-18 minutes, or until a toothpick can be inserted and removed into the cupcakes with no batter on it.
Remove the cupcakes from the oven and let cool for a few minutes before removing them from the pan. They need to cool completely before frosting them.
To store: Your Funfetti cupcakes (without any frosting) can be stored in a sealed container at room temperature for up to 1 week. Once frosted, the cupcakes will only last 2-4 days. If using dairy-based frosting (such as buttercream), keep them stored in the refrigerator.
