A wedge salad is a delicious appetizer or side dish with crisp iceberg lettuce, blue cheese, bacon, and tomatoes! No basic side salad can compare to a huge wedge of fresh lettuce with delicious toppings! Plus, it's super easy to customize with your favorite dressing, cheeses, and veggies!
Prepare your 1 head iceberg lettuce by peeling off the outer 2-3 layers of leaves (or more until you get to nice, firm, fresh leaves). Then, hit the butt of the stem onto your counter or a hard working surface. Pull out the core and quarter the lettuce.

Put each of the 4 wedge sections onto your salad plates.
Drizzle or pour 1 cup blue cheese dressing over each section, then add chopped crisp 4 slices bacon, diced 1 cup cherry tomatoes, 1 tablespoon chives, and ¼ cup blue cheese crumbles.

Choose a fresh and crisp head of iceberg lettuce for the best texture and flavor!
Make sure to dry the lettuce wedges with paper towels to prevent the dressing and toppings from sliding off.
The smaller you dice the toppings, the more they will stay on top of the lettuce wedge.
Make your wedge fully loaded! Add more of your favorite salad toppings, including croutons or cheese crisps, sliced radishes, fresh green onions, sunflower seeds, or pepitas; the list goes on!
You can prepare the toppings up to 24 hours in advance and keep them in the fridge to save time!
