This green bean potato sausage casserole is a hearty, flavorful, filling variation of a classic holiday side dish! It has green beans, potatoes, sausage, bacon, onion, and tasty spices. In fact, it is a complete meal and could even be served as the main course!

Instructions
To begin, preheat your oven to 400°F (205°C) and lightly grease a 2.5-quart casserole dish or a Dutch oven.
In a large skillet over medium-high heat, add your chunks of bacon and cook for 1 minute, stirring occasionally. Add in the diced onion and garlic and cook until soft, about 3-4 minutes.
Once the onion is tender, add in the seasonings (Cajun seasoning, garlic powder, pepper, and crushed red pepper flakes). Stir to combine and then add the smoked sausage and butter and cook until the butter has melted and your sausage chunks are lightly seared.
In your casserole dish or Dutch oven, add your cubed potatoes and green beans. Top with the onion and sausage mixture and then stir gently to combine. Pour in the beef broth.
Cook, uncovered, in the preheated oven at 400°F (205°C) for 40 minutes.
Once done, remove from the oven and serve immediately.
Notes
Whether or not you want to peel your potatoes is completely up to you! This recipe will be delicious either way!
If you want to omit the bacon, you can sautee your onion in 2 tablespoons of extra virgin olive oil.
To make this dish in a slow cooker, prepare as directed and cook on low for 6-8 hours.
To store: Keep any leftovers in an airtight container in the fridge for up to 4 days.
To reheat: You can reheat your green bean casserole in the oven at 350°F (175°C) until heated all the way through or in small bursts using the microwave.
