1lbpotatoes(3 ½ cups diced, about 3 medium russet potatoes - *see note)
2tablespoonolive oil(extra virgin)
1ozdry onion soup mix(packets are 1.9 ounces, use approximately half the packet - *see note)

½teaspoongarlic powder(optional)

Instructions
To get started, line a baking sheet with some parchment paper and preheat your oven to 450°F (230°C).
Toss the potatoes, extra virgin olive oil, dry onion soup mix, salt and pepper, plus optional garlic powder if desired. You can do this in a medium-sized mixing bowl, a large plastic food storage bag, or directly on your baking sheet. As long as the soup mix ends up evenly distributed, any method will work wonderfully.
Bake the onion soup mix seasoned potatoes in your preheated oven at 450°F (230°C) for 35-40 minutes. Use a wooden spoon or spatula to stir them every 15 minutes to ensure they cook evenly.
Remove from the oven and serve when your potatoes are fork-tender and golden crispy on the edges. Serve immediately.
Notes
You can peel your potatoes if you like. I chose to leave the peel on mine, but it is completely up to you!
Use a potato variety that is high in starch so it will hold up well to the heat of the oven, like Russet potatoes or Yukon Gold.
I recommend either Lipton brand dry onion soup mix, or you can make your own at home with my homemade onion soup mix!
The ingredients and instructions are for using a half packet of dry onion soup mix. Using a whole packet may be overwhelming, or not, depending on your personal tastes. Adjust to your liking.
To store: Store any leftover potatoes in a storage container in the fridge for up to 5 days.
To reheat: Use small bursts in the microwave to reheat.
