Instructions
To get started, preheat your oven to 350°F (180°C).
Pour the apple pie filling into a 9x13 baking dish.
Crumble the prepared sugar cookie dough over the top of the apples. Make sure to cover the entire surface in a thick layer.
Sprinkle with apple pie spice, if desired, and then place into the oven and bake uncovered for roughly 40-45 minutes, or until the cookie crust has become golden in color and the juice is bubbling (*see note).
Once finished, remove from the oven and serve warm.
Notes
You can reduce the sweetness of this easy cobbler by combining one or two 8 to 12-ounce bag(s) of thawed fruit or berries with 2 cans of apple pie filling.
Stir in ¼ teaspoon of cinnamon or apple pie spice to boost the flavor of your apples (before topping with sugar cookie dough).
Even when your cookie dough has turned golden brown, your cookies could still be under-baked. It is best to check by inserting a toothpick and making sure it comes out almost completely clean. *Pie filling will cling to it, but you don't want to see runny cookie dough clinging to your toothpick.
If your dough has browned but is not done cooking, cover your dish with aluminum foil and then bake it for an additional 5 minutes.
To store: Place your leftovers into an airtight container in the fridge for up to 5 days.
To reheat: Place portions in the microwave and heat in 30-second increments until warmed through.
