Instructions
To get started, rinse and pat the alligator sirloin dry and then cut it into 1-inch bite-size chunks.
Next, toss the alligator pieces with olive oil and seasoning, then set aside at room temperature for 40 minutes.
Meanwhile, clean, oil, and preheat your grill to high heat (450°F to 650°F).
Skewer the seasoned alligator bites and grill for 5 minutes per side, or until they are cooked through and are a nice golden-brown color.
Once cooked, remove the skewers from the grill and serve immediately.
Notes
Alligator should be cooked to a minimum internal temperature of 160°F (71°C).
To store: Place your alligator bites into an airtight container and place them in the fridge for up to 4 days.
To reheat: Bake in a 350°F (177°C) oven until heated through.
