Instructions
Add the ½ cup chicken broth and 2 lbs country style pork ribs to the inner pot of your Instant Pot or pressure cooker. Pour the ¼ cup apple cider vinegar over ribs, then season with ½ teaspoon salt and ¼ teaspoon ground black pepper.
Seal and cook on manual high setting for 15 minutes, then NPR (natural pressure release) for 10 minutes. Finish venting the knob and remove the country style pork ribs to a baking sheet.
Preheat your oven to the high broil setting.
In a small mixing bowl combine the 1 cup BBQ sauce, 1 tablespoon liquid smoke, and optional 2 tablespoon light brown sugar. Use a basting brush to coat the country-style pork ribs generously.
Broil the bbq ribs until the sauce is caramelized to your liking. Remove from the oven and serve immediately.
Notes
Your pressure cooker takes between 10-15 minutes to fully heat before the cooking cycle begins. Be sure to add this in to your planning so everything finishes at the right time (and together).
Chicken broth usually works best with pork (except in Asian cooking), however, either chicken or beef broth or stock will work wonderfully.
Broiling is an optional step that yields a nicely 'charred' bbq pork ribs dinner. Your pork ribs are fully cooked before this step and can be served with bbq sauce directly out of the Instant Pot.
