In a large mixing bowl, add chopped 4 cups chicken, 1 cup celery, 1 cup red seedless grapes, ½ cup dried cranberries, ½ cup pecans, 1 cup mayonnaise, ½ teaspoon each, salt & pepper.

Use a wooden spoon to gently stir everything together until all of the ingredients are well combined.
Garnish with 1 tablespoon parsley if desired and serve immediately or cover and store in the fridge for later.

Start with less mayonnaise if desired and add more until the chicken salad reaches your desired creaminess.
You can toast or roast the pecans and then crush them until they are chunky or fine! Toasting the nuts in a shallow frying pan over medium-high heat is a quick way to add more flavor. Heat until fragrant then transfer immediately into a clean plate.
If you want to lighten up your chicken salad, opt for plain Greek yogurt instead of mayonnaise.
