Instructions
To get started, line your baking sheet(s) with parchment paper or a nonstick silicone mat.
Prepare The Mixture
Add your 1 cup Cornflakes to a to a bowl. You can add them to the clusters as-is, which is my preference, or use the back of a wooden spoon to crush them gently. Avoid crushing them too much; you don't want crumbs, just large chunks.
In a microwave-safe bowl, heat your 1 cup milk chocolate melts in the microwave for 30 seconds. Remove the bowl from the microwave and stir. Continue heating the chocolate in short, 15-second bursts making sure to stir after each session until melted.
Pour the cornflakes and ½ cup raisins into the bowl with the melted chocolate and stir gently to combine.
Portion, Set & Serve
Scoop teaspoonfuls of the mixture onto the prepared baking sheet(s).
Transfer the tray to the refrigerator and allow the bites to chill for 30 minutes, or until the chocolate has completely set.
Notes
Notes:
Don't crush your Cornflakes too much. The goal is to have nice, crisp pieces in each bite instead of crumbs. I skip this step.
Microwave your chocolate in short bursts to prevent it from burning.
You can always swap out the raisins for craisins, sultanas, or dried cherries. Try some chopped dates, prunes, or apricots. I enjoy a variety of dried fruits in this candy, and I'm sure you will, too!
Storage:
Keep these bites stored in an airtight container at room temperature for up to 5 days.
