Instructions
To get started, preheat your oven to 350°F (175°C).
Pour your cherry pie filling into a 9x13 baking dish and mix with the optional almond extract if desired.
Open the package of prepared sugar cookie dough and crumble it over top of the cherry pie filling. Make sure to cover all of the pie filling in an even, thick layer.
If desired, sprinkle some apple pie spice over the sugar cookie dough (*see note). Place the baking dish into the oven and bake it at 350°F (175°C), uncovered, for about 40-45 minutes, or until the cookie dough has become a golden-brown color and the juices from the pie filling are bubbling (*see note).
Once the cobbler is done baking, remove it from the oven and serve warm.
Your dough could be golden-brown in color, but still be undercooked. Use a toothpick to check by inserting it into the cobble. It should come out almost completely clean, although some of the cherry pie filling will still cling to it.
If you find that your sugar cookie dough has browned, but it is still not done cooking, go ahead and cover the baking dish with a sheet of aluminum foil and continue to bake for another 5 minutes.
To store: Place your leftovers into an airtight container in the fridge for up to 5 days.
To reheat: Place portions in the microwave and heat in 30-second increments until warmed through.
