Instructions
Add the jalapeno, bell pepper, and onion to a food processor (or blender) and puree until smooth.
In a small mixing bowl, combine the mayonnaise, vinegar, and lime juice. Mix in the puree from the food processor until thoroughly combined.
Add the seasonings (salt, garlic powder, cumin, mustard powder, and pepper). Stir until evenly distributed.
Cover the bowl with plastic wrap and place it in the fridge to chill for a few hours to let the flavors meld before serving.
Notes
You could also opt for 2 teaspoons of pickled jalapeno for less heat.
Use a good quality mayonnaise like Hellman’s, called 'Best Foods' on the West Coast, or Duke’s for best results.
One fresh lime typically yields 2 tablespoons of lime juice when squeezed, so you'll need a half lime for this recipe.
