Greek pasta salad combines farfalle pasta, kalamata olives, red onion, tomatoes, artichokes, feta cheese, and Greek dressing! It's a quick and easy side dish or main course you can make the night before and keep in the fridge until needed! The tangy flavor is refreshing and perfect for summer picnics, potlucks, and BBQs!
12ozfarfalle bowtie pasta(cooked per package instructions, drained, and rinsed with cool water)
14ozartichoke hearts(quartered, not the marinated variety)
1 ½cupscherry tomatoes(sliced or quartered)
½cupkalamata olives(sliced or quartered)
4ozfeta cheese(crumbled)
¼cupred onion(peeled and thinly sliced)
12ozGreek salad dressing(your favorite brand)
each, salt & pepper(to taste)

Instructions
In a large mixing bowl, combine all of your Greek pasta salad ingredients (12 oz farfalle bowtie pasta, 14 oz artichoke hearts, 1 ½ cups cherry tomatoes, ½ cup kalamata olives, 4 oz feta cheese, ¼ cup red onion, 12 oz Greek salad dressing).
Toss or mix until all of the ingredients are evenly distributed and well coated with the dressing. Taste and adjust seasoning with each, salt & pepper as needed.
Serve immediately. Garnish with extra crumbled feta and freshly ground black pepper if desired.
Notes
The nutritional values will change depending on your choice of dressing, so all nutritional information is approximate.
Al dente pasta works best for most pasta salads! The tender noodles can take in some of the dressing, making them more flavorful. Feel free to choose your favorite pasta shape. Fusilli, penne, and bowtie pasta work well!
Grilled chicken, shrimp, or even chickpeas are excellent protein additions to this salad.
Greek pasta salad can be made up to 24 hours in advance. Wait until ready to serve to add the dressing.
