This is the perfect recipe to use up leftover hard-boiled eggs from Easter morning as an appetizer, or make a super tasty Cinco de Mayo snack. They're equally suited to game day parties, too!
This spicy deviled egg recipe can be as smooth and creamy or hot and spicy as you like. Add cayenne pepper, use more jalapeno, or skip the 'tame' jalapeno slices and go for the hot variety instead to dial up the heat!
🥘 Ingredients
- Eggs - Hard-boiled eggs (I used some air fryer hard-boiled eggs), preferably cooked the day before and refrigerated overnight so they are nice and firm when sliced and filled. Leftover Easter eggs are ideal!
- Cream Cheese - The tangy base for the creamy popper filling. Set out at room temperature for about 15 minutes before starting.
- Sour Cream - Another great, cool but tangy addition to balance out any heat you add to the popper-inspired filling.
- Bacon - Freshly crisped and chopped bacon is best, but bacon bits work in a pinch! Save your bacon grease to fry the jalapenos as a third way to incorporate them into your deviled eggs.
- Jalapeños - Fresh, pickled, tame, or spicy. Dice the jalapenos (with or without seeds) and slice some for garnishing the assembled eggs.
- Mustard - A small bit of Dijon mustard makes the cream cheese flavor 'pop'.
- Vinegar - Distilled white vinegar adds a tangy flavor that complements the sour cream and cream cheese.
- Seasoning - Garlic powder and salt add the base flavor to the creamy popper filling, but a pinch of sprinkled cayenne or chipotle chili powder is tasty too. Top with a sprinkle of the usual paprika or smoked paprika if desired.

👩🏻🍳 How To Make Jalapeno Popper Deviled Eggs
This quick deviled egg recipe combines all your favorite popper flavors. Grab some eggs, a knife, a cutting board, measuring utensils, and a mixing bowl to whip them up.
This recipe uses 6 whole eggs to yield 6 servings.
Prepare The Bacon & Hard-Boiled Eggs
Step 1: Cook the eggs. Prepare the 6 large hard-boiled eggs using your preferred method. My go-to quick, no-fail method is using my air fryer hard boiled eggs. *I recommend that the eggs be cooked and chilled overnight before making deviled eggs.
Step 2: Peel, slice, and remove yolks. Cut eggs in half and remove the egg yolks, placing them into your mixing bowl. Mash using a fork (photo 1), then set aside.
Mix The Popper Filling
Step 3: Crisp the bacon. Cook the 2 strips of bacon over medium heat until crispy. Remove to a plate or cutting board to chop once cooled.
Step 4: Mix the filling. Add the softened 2 ounces (56.7 grams) cream cheese, 1 tablespoon sour cream, 1 teaspoon Dijon mustard, 1 teaspoon white vinegar, ⅛ teaspoon garlic powder, and 1 pinch salt to the mashed egg yolks (photo 2). Mash and combine until smooth.
Then add the diced 1 large jalapeno and chopped, crisped bacon (photo 3). Stir until evenly distributed in the mixture.
Assemble, Garnish & Serve
Step 5: Fill the halved eggs. Use a spoon or a bag (plastic storage bag or piping bag with the tip snipped off) to fill the halved egg whites (photo 4).
Step 6: Garnish and serve. Top with extra bacon or sliced jalapenos. Sprinkle with cayenne pepper, chipotle pepper powder, or paprika to serve.

💭 Angela's Pro Tips & Recipe Notes
- I like my hard-boiled eggs cooked in advance, but you should make the deviled eggs within 2 days of cooking your eggs at most. Consider this when storing the assembled deviled eggs, too.
- Add onion for added depth of flavor. A bit of granulated or powdered onion is the easiest addition, but I recommend sauteed onions or caramelized onions.
- Use the bacon grease to crisp up some of your jalapenos for a crispy texture and even more tasty flavor.
- A combination of jalapenos is divine. I love the combination of pickled or tamed jalapenos with slices of fresh jalapenos.

Store deviled eggs in an airtight container or a deviled egg holder in the refrigerator for up to 3-4 days. When serving, return the deviled eggs to refrigeration as soon as possible so that they last longer.
The best way to store your deviled eggs is to apply a sheet of plastic cling film over the eggs (a sprinkle of paprika or cayenne pepper will keep the plastic from sticking to the eggs). Then store in an airtight container. This will maximize freshness.
