It's a traditional Mexican breakfast dish that typically consists of fried eggs served on a bed of lightly fried corn tortillas and topped with a spicy tomato sauce.! Add some refried beans and shredded cheese for a hearty and filling meal!

🥘 Huevos Rancheros Ingredients
The secret to huevos rancheros is using fresh ingredients! The fresher the ingredients, the better the flavor!
- Corn Tortillas - 4 corn tortillas.
- Eggs - 4 large eggs.
- Diced Tomatoes - 1 cup of canned diced tomatoes. Don't drain the juice!
- Jalapeno - 1 medium fresh jalapeno pepper with the seeds removed and diced.
- Onion - ½ medium yellow or white onion, diced
- Garlic - 2 garlic cloves, minced (or 2 teaspoons).
- Cumin - 1 teaspoon of ground cumin.
- Smoked Paprika - 1 teaspoon of smoked paprika.
- Salt & Pepper - ¼ teaspoon of both salt and pepper.
- Olive Oil - 2 tablespoons of extra virgin olive oil.
- Cilantro (optional) - ¼ cup chopped cilantro for garnish.

🔪 How To Make Huevos Rancheros
With how delicious this breakfast dish is, you may be shocked at how easy it is to make! To get started, you'll need a skillet, a knife, your cutting board, and a wooden spoon.
This recipe will make enough huevos rancheros for 4 people.
- Preheat. Preheat your oven to 350°F (175°C).
- Saute veggies. Heat 2 tablespoons of olive oil over medium heat in a medium-sized skillet. Add ½ of a diced onion, 2 teaspoons of minced garlic, and 1 diced jalapeño pepper, and then sauté until the onion is translucent.
- Thicken the sauce. Add 1 cup of canned diced tomatoes, 1 teaspoon of both cumin and smoked paprika, and ¼ teaspoon of both salt and black pepper to the skillet. Stir and cook for about 10 minutes or until the sauce has thickened.
- Heat the tortillas. While the sauce is cooking, heat 4 corn tortillas in the oven for 5-10 minutes or until they are warm and slightly crispy.
- Add eggs. Crack 4 large eggs into the skillet, one at a time, over the sauce. Cook for about 2-3 minutes or until the whites are set.
- Assemble. To assemble the huevos rancheros, place a tortilla on a plate and top it with an egg and some of the tomato sauce mixture. Repeat with the remaining tortillas, eggs, and sauce.
- Serve. Garnish with ¼ cup of chopped cilantro and serve immediately.

My husband loved it! Huevos Rancheros is one of his favorites. I tweaked the recipe. I used a 10 ounce can of Rótel diced tomatoes, left most of the seeds and membranes in the jalapeño and used regular paprika. We enjoy spicy foods. Another plus, the ingredients were ones I always have on hand.
