Instructions
Start out with gathering your seasoning ingredients and grinding the fennel seeds. Measure each into a small bowl then mix until combined.
Combine your ground pork (or preferred ground meat) and diced raw bacon with seasoning and the optional maple syrup. Mix until the seasoning is evenly distributed - but without over-mixing the seasoned meat.
Shape the patties by portioning the breakfast sausage mixture into 8 equal portions. Roll each portion into a ball, then flatten out until approximately ½ inch thick.
In a large skillet, melt the butter over medium heat. Once the butter is bubbling, add the sausage patties and cook until browned, about 3-4 minutes. Flip and repeat until the second side is browned and your patties are cooked through.
Remove from heat and serve immediately.
Notes
Use your favorite ground meat - pork, beef, lamb, goat, chicken, turkey, or your preferred game meat.
Pick your ground meat (or any combo) and shape the patties, then pop them into the fridge so the flavors 'meld' or 'bloom' while refrigerating. At least 8 hours is great, but letting the patties refrigerate for up to 24 hours is best.
If you like hot breakfast sausage, you may add more crushed red pepper, cayenne pepper, or chipotle powder to your sausage.
To store: Place your cooked breakfast sausage leftovers in an airtight container and refrigerate for up to 4 days
To freeze: You may also freeze your patties in a freezer-safe container or plastic storage bag for up to 2-3 months. Wrap them in plastic wrap first so that they don't stick together
To reheat: Place your patties in a skillet on medium heat and cover. Heat for 8-10 minutes or until the sausage is heated through. To microwave, place your sausage on a paper towel-lined plate and cook on high for 25-30 seconds.
